    I personally Love meat from a Traeger. My Wife doesn't like the amount of smoky flavor and enjoys less subtle. As I have cooked for larger audiences, I have found cutting back on the smoke flavor a little appeals to more people. At least where I live.

    Here's the deal on Prime Rib. If you have a mid aged cow that comes open, the Rib Primal likely will be a bit chewy as a steak. However, if fleshy, this age of animal can have some of the best flavor. Grind what you don't want for roasts, but do absolutely try the Rib Roasts from such stock.

    Service project.

    We do some of that when something comes up stifled or crippled. The value at the sale barn is minimal but the feeling of finding a good alternative to help someone is pretty high. I like "Selling High" over selling low any day.

    How High?

    I think it's going to depend upon the cows and calves. Powder River makes a Calf Pass Panel that I use for creep feeding or sometimes so the calves can get to shelter. The Bars are vertical (Somewhat like a feeder panel) with an adjustable Horizontal bar. I find that adjustability handy at times.
