SSAP, the best advice I can think of to give you is to have those grass fed finished steers shipped air freight packed in dry ice. :wink:
I've done this for several years with a guy who lives in Boston but has connections to this local area. I deliver the steer to the local locker plant and he pays me by the pound on the hoof for it. The guys butcher and process the steer to his specs. Then they pack it in boxes with dry ice and take it to the Rapid City airport and put it on a plane headed for Boston. I can't tell you what it costs but you could probably make local inquiry as to what it might cost.
My customer must be satisfied with his costs in our arrangement or he wouldn't keep doing it. He leaves a standing order for a black steer each year. This year the steer I kept for him turned out to be a runt and did not grow up like he should. So I substituted a Hereford with frozen ears that I had been keeping for myself.
My customer didn't ask so I didn't tell him he was getting a white face steer instead of a black one.

I think once the steer is in the freezer it's hard to tell what color hair was on it. :wink:
I was so disgusted with the runt I sold him so now I don't have anything to butcher for myself. :roll:
