HOW TO BOIL EGGS

Bring eggs to room temperature before using.

If the egg has been stored in the refrigerator it can be warmed gently under a flowing hot tap.

Place sufficient water to cover the eggs in a saucepan and bring to a gentle boil.

Lower the eggs carefully into the water, using a tablespoon.

When the water reboils, start timing and reduce the heat so that the water simmers gently.

Fast boiling makes the wgg ehite tough and causes the egg to bang against each other and crack.

Timing boiled eggs depends on the size and degree of hardness desired.

You should start timing the eggs from the moment the water first boils.

Soft-boiled (soft whites, soft yolks):

Large size: 3 minutes 20 seconds.

Medium size: 3 minutes.

Small size: 2 minutes 40 seconds.

Medium-boiled (hard whites, soft yolks):

Large size: 4 minutes 15 seconds.

Medium size: 3 minutes 50 seconds.

Small size: 3 minutes 20 seconds.

Hard-boiled (hard whites, hard yolks):

Large size: 10 minutes.

Medium size: 8 minutes.

Small size: 7 minutes.

I should send this to a friend of mine. Who......had invited us over for BBQ.....got busy outside after puttin the eggs for the Tater Salad on to boil.........when we got there, and went in the house. The eggs had boiled dry......and .......EXPLODED!!!!! all over the place. Especially up under the ventahood above the stove. It was everywhereeeeeeeee LOL

Heck of a lot easier to bring the eggs to a boil, put a lid on the pot and than turn the heat off and wait about 10 minutes, can't over cook them that way and the lid on keeps enough heat in to cook the stinkers hard... Now, with fresh eggs it is a pain in the arase because their is not enough air inside the shell so you end up with egg white that sticks to the shell. but there are ways around that as well.

You got this one right, IL. That's how I boil them....and I try to use store-bought eggs for hard-boiled eggs because they aren't fresh :)

Yep.. Or you just leave a smal bowl of fresh eggs out on the counter for about 24-36 hours.. Usually enough time for the airbubble to gt a bit bigger in the egg. I haaven't bought store bought eggs much in the past 6 years. ONce the hens we had started laying we had more than we could handle... Than we lost them al to mauring critters and time and now have hens again so we have fresh eggs all the time.

This brings to mind when I had chickens and sold eggs. We were going to be gone for a few days during the winter and my dad was taking care of things. He started packing warm water to those hens. When I got back,
every bowl, pot, and dish in the house was full of eggs. I think I had to wash 48 dozen eggs...that warm water really kicked those old hens in gear!!!!

Geez, I hate chickens, along with pigs :( I love eggs and pork though :wink:
We also have way too many predators, prolly our dogs would kill the chickens, too.

Our neighbor has plenty of chickens, they can't keep up with the eggs so once in awhile we get some fresh. :)
