We freeze them here. Wash em, toss em in a ziploc. When you go to use them run them under hotwater and the skin falls off. I'll never can tomatoes again :)

I HATE to can tomatoes. What a mess in my kitchen

But, it has to be done. AND there is nothing more satisfying than hearing jars sealing. That is like a job well done pat on the back.

She makes alot of spagetti, goulash and her favorite macaroni and tomatoes sometimes with hot dogs or ring bologna when we got married I could'nt stand it but it grows on you.We have 6 kids so they eat alot but also every birthday party she makes a big pot of spagetti which use 6 to 8 quarts at a time.

Those pictures brought back lots of memories!!! She is a cleaner canner than me. That white stove would be red at my house by the time I'd get done. In fact, everything would be red!! I agree that the sound of lids popping is a great one.

I didn't drag out my pressure cooker this year... Yeah, you don't process as long, but the rubber ring on my pressure cooker always leaks on my stove till it gets used a couple of times.......Yes I know I have left myself open for jokes here...

Last weekend we bought 3 bushels of peaches at Delta and got them put up. Yesterday we went to the local farmer's market and bought 3 bushels of tomatoes plus the added items to make tomato sauce and salsa. Right now we are waiting for the pressure canner to cool off so we can put in the next batch. Hopefully have 35-40 quarts to keep us warm through the winter. Plums next then the apples.
