Christmas baking

Thinking of getting going on my baking.What kind of things are a MUST have in your house?

In my home...Two kinds of nuts and bolts,shortbread,butter tarts,fudge{my grannys recipe},crab tarts,cheese crisps,gingerbreadmen,snowballs and christmas pudding

Gottta have an Apple Pie, Pecan Pie, Coconut Pie.......and then there's
Peanut Brittle, Devinity, Fudge, CHICKEN PUFFS!!!, reese balls, martha washington candy, sausage balls, and my own recipe for chocolate chip oatmeal coconut cookies. That's what I always make every year, then everone else in the family has thier stuff they always make.......it's basically a FAT FEST Christmas Eve around here. LOL

Do any of you have the rec. for whipped shortbread? I lost mine ! How can you have christmas with out whipped shortbread ARRRRG.


Must haves in this house are White Chocolate pretzels, tarts of all varieties, Marachino Mice for decorations, Rosette cookies, Lefsa, Cringla, and of course the topper..... Pumpkin cheesecake...... Gingerbread everything from cookies to pancakes to Lattes..... LOTS of butter rum beverages. I go through a 4 liter of vanilla icecream just for the drinks!


Ohh, I forgot Christmas is not christmas without the mint icecream with the little balls in it .MMMMMMMM

My fav.whipped shortbread recipe
2lbs butter
2cups icing sugar
1cup cornstarch
6cups flour
1tsp.salt
2tsp vanilla
Whip all together well and drop by spoonfuls onto cookie sheet.Bake at 325F for 20 minutes.

Ok Judith share your white chocolate pretzel reciepe,love chocolate and pretzels together.

I forgot,I always bake buns and pies for Christmas,pumpkin,apple,pecan and chocolate pies.

That is the same recipe for the shortbread whew! Thanks a bunch!

OK this one is really really hard and it takes ALL day to do! ( not likely, I'm not known as a fiddle farter :)

Melt white chocolate disks ( that you find in the bulk section of the store)

Dip Pretzel

Place on wax paper to dry

Eat :)

For being sooo simple they are absolutely delicious!

The mice are easy too

Dip marachino cherry in chocolate (it has to have the stem as this will be the tail)

Place on wax paper, take two almond slivers and place them on the front for ears.

Take a chocolate chip and press on over the slivers. You now have a head.
Take red icing (I use the tube from the store as it is easier to decorate with)and dab on two little eyes. They are sooooo cute

Yes,I also sometimes cut red and green cherries into quarters and top the cookie before cooking,gives it nice X-mas colour

The only thing Mrs. Greg and I do different with the cookies is that I pipe them through a decorating bag. I put a large star shaped tip on it. The only problem is getting the darn dough in the f in bag! Yes Lilly you DO want to make these cookies! Trust us. Problem is they seem to disappear faster than you can make a batch!

Burnt fingers is more of a Halloween dish? No? Did ya pull a pan out of the stove and touch the top element? Ouch... If I had a dollar for everytime I've done that! OVEN MITTS LADIES.......

No...... I spoon my concauction on to the counter and feel it for thickness......... Yeah I know it sounds silly, but that's the only way I know it's just right...

Judith, My boys will love the mice.... :D :D
I'm coping off all these recipes......

The usual cookie thing and often I'll do Odense almond paste macaroons- soooo simple (egg white, paste and sugar) but they get eaten like candy so I have to put them out on the plate in batches.
Also for Christmas morning either a Danish Kringle or large pan of yeast raised sticky buns. Yummy.
This year we'll try Lily's chicken puff thingies. It is so nice getting recipies that come with your recommendations behind them.

We have a small delima at our house with Christmas.
NCAA rules have changed that all wrestlers have to be within two pounds every week of there weight class or they can't wrestle.. And Valentine is going to the Clash over christmas vacation.. So Son #1 is going to have to watch his weight over Christmas....
I'm trying to think of something fun, that wouldn't put the pounds on instead of Christmas dinner...

This morning after I finally broke down and threw a couple bales out for the older cows- I stopped at the neighbors for coffee, since they are close to where these cows are grazing...
Anyway his wife was making up a list of food to get at the store for their son-- mostly meats and cheeses-- he is a junior in HS and a wrestler- and this year he went on the Atkins Diet to get down to weight...She said he really did good and dropped 12 pounds in a little over a week and was right on weight- until Thanksgiving- he splurged and ate one whole punkin pie himself-- and gained it all back plus a couple....

Should be a law against having wrestling during the Holidays period....
