Christmas Baking

Well I've started. Got sausage balls made. Now I'm workin on Chicken Puffs. 6 x the normal recipe. I'm gonna be cookin puffs all night :roll:

Then I have banana nut bread to go, pies, Ranch roll ups, maybe some peanut brittle tomorrow if the sun shines. Then of course tomorrow after all the festivities, I'll hafta get the turkey in the oven, and do dressin for Christmas dinner.

Oh it smells good in here. What are ya'll baking?

Lilly----so....if you are still baking, then I can "ASSUME" that my Christmas gift box of your homemade goodies will be a day or two late, right??? :wink: :wink: :wink: :wink:

This afternoon/evening Mrs Gcreek has made some Banana Bread, a Lime-Poppyseed loaf, and there are Butter Tarts in the oven. It smells pretty good in our house too. :D

I don't do any baking,,,we have wonderful neighbors that deliver all the goodies one household ever needs..with just the 3 of us here,,we have more than we can eat...instead of baking for Christmas...I do photo things...they don't add on the lbs...lol

Made fudge, divinty, and peanut brittle.
Going to make bread rolls tomorrow to go with the clam chowder I'm making.
Just 4 of us. so not making much.

1 lb of breakfast sausage...hot kinds the best
1 lb of grated chedder cheese
2 cups of bisquick baking mix

Mix well...gotta git in there with your hands and squeeze it together. Then make 1 inch balls and place on sprayed cookie sheet. Bake at 350 for 20 minutes.....and chow down. They are awesome, our whole family loves em.

I think I have posted the recipe for Chicken puffs in the past...it's kinda lengthy....I'll try to find it in a search.

Ranch Roll ups.
Pkg of Cream Cheese
Pkg of RAnch dressing mix
mix those together.
Then chop up sandwich ham into small 1/2 inch squares.
Then slice up that green green lettuce real thin...can't think of the name of it...long leaves.
1/2 lb cheese grated
mix all that into your cream cheese mixture.

Then spread on the large flour tortillas, and roll them up
Refridgerate them for a lil while.
Then slice them into 1 inch pieces.

Makin my mouth water just thinkin bout em. I been in the kitchen baking all evenin, and haven't eaten supper. Now it's time for bed. Guess I can just say I'm savin room for all the goodies I get to eat tomorrow.

OK Found the Chicken Puff's recipe I posted

Puffs
1/2 cup chicken broth
1/4 cup margarine
1/2 cup sifted all purpose flour
2 eggs

Filling
1 - 8 oz can of chicken (or 2 small boneless chicken breasts boiled)
2 - 3oz pkg's of cream cheese softened
1/4 tsp salt
3 dashes hot pepper sauce (Louisiana Red hot) and usually way more than 3 dashes around here. LOL
pinch of garlic salt
pinch of onion powder

In a small sauce pan heat chicken broth and margarine over medium
heat until boiling and margarine is melted. Remove from heat. Immediatly add flour all at once. Stir briskly with a wooden spoon until the mixture forms a ball and leaves the side of the pan. With wooden spoon beat in the eggs 1 at a time until well mixed.
Preheat oven to 375 degrees, Grease a large cookie sheet (if you don't the puffs will stick, and the bottom half of the puff will stay stuck to the cookie sheet) Drop dough by 1/2 to 3/4 tsp fulls onto cookie sheet about 2 inches apart. Bake for 25 to 30 minutes until puffs are golden brown.
When puffs are cool, cut them with a knife until they are almost in half (like you would to butter a biscuit)
Filling: In a small bowl combine all filling ingredients and stir until well
blended. Using a butter knife, open puff and put in just enuff filling to fill the hollow area, then squeeze closed. Eat as many as you can while puttin em together without anyone seein you and make sure you keep an innocent look on yer face.....even if you have puff stuff on the side of your lip......it didnt get there because you ate one......it happened durin the process of stuffin the puff.
You can freeze these to serve later...(if there's any left) heat in a 350 degree oven for a few minutes then serve....
We usually just stick em on a cookie sheet when we have our Christmas Eve gift opening, heat em up just a lil bit and then serve em while they are warm, not hot.
Get ready to PIG OUT!!!!
Oh n don't eat any of the puffs before they are stuffed....they don't have much taste at all.....not nearly as good as when they got the fillin in there.

Sadly there probably won't be any divinity or peanut brittle around here this year. It's been cloudy and drizzly for the past week and a half, with thunderstorms expected for tomorrow night and Christmas day.

Cooked candies do NOT work if it's weather like that, it's a waste of time and ingredients.

:cry: I sooooo wanted some divinity too. :cry:

Lets see we just finished last night with the rum, orange, and amarretto candy's and they joined 3 kinds of fudge, fruit cakes, banana & pumpkin breads, mint toffee cookies, sugar cookies, anise cookies, spice cookies, lemon cookies, oatmeal, mexican wedding cakes, and a sugar cookie with a cherry in the center diped in chocolate. If I have to bake or see another Christmas cookie it had better be next Christmas at the earliest!!! :roll:

Must makes in our house are shortbread cookies,butter tarts, and christmas cake (Made in November, wrapped in rum soaked cheesecloth,then wax paper then aluminum foil, and left to mellow in the fridge... mmmmm..... :p ) I try and make a different cheesecake every year for Christmas dinner dessert. This year it's a raspberry cheesecake topped with raspberries from our garden. Looks like it's going to be a keeper.

And of course, perogies. Hundreds of perogies. :D :D :D :D

I'll bet they're awesome! Sometimes there are too many sweets during holidays. I wonder if the pork would be good with a sweet Kosher wine.....maybe some Manischewitz. :wink:
