Easter dinner

Hazelnut encrusted rack of lamb,( lamb was a bum that after milk replacer got grass and oats we burtcherd it on Thanksgiving day, Cut it up the next when I Frenched the racks) potato pancakes with candy cinnamon apples, asparagus with hollandaise sauce, then much later strawberry short cake with dark chocolate sauce and whipped cream

Sounds delicious, we had chateaubriand and lobster for our Easter dinner last night . It was a wonderful celebration and meal..

We are expecting some friends in later tonight after the last service of the day and we are having a late prime rib roast dinner..

Now that would be a real treat!
How do you cook your lobster? Had a friend tell us
not to boil it but to broil it...but he's a land lubber like
the rest of us.

I would have enjoyed Easter dinner at your house Jody more than at the prime rib houses. :wink:

I like prime rib but I'll never pass up a chance of a lamb rack, Only thing God did wrong with a lamb was not enough chops

Being from Buffalo, Wy and knowing a lot of Basque people, I can
agree with you Jody. It's important to know how to cook lamb and that
it be butchered properly. My Basque sister-in-law roasts lamb on
the broiler pan (doesn't broil the meat, but uses the pan) so that the grease drips through the holes to the bottom
of the pan. She makes slits in the meat and adds garlic cloves.
Some of the best meat I ever ate was at a Basque celebration in
the Big Horns. They roasted that meat on a spit. It was soooo yummy.

FH we have broiled it on the grill and it works out well, either wrapped in tin foil or straight in the shell on the grill. The tails we did Sat. we steamed them..
I still have yet to do a live one ,hubby said next time he will do them. I just cannot bring myself to killing them and more than likely would have them living in the bath tub. :lol:

Jody I love lamb as well, it sure makes a nice change to beef once and a while.

We steam our lobster. Prices have been real low the past year so I had it several times in the last year. I'm about 30 minutes from the docks. A few places within 10-15 minutes that carry lobster. Sometimes we do baked stuffed as well.
