Green Tomato Chow chow

Recipes please......But not the sweet kind. We want it hot.

it's supposed to get down to 36 tonight....and we had a tiny bit of frost last night...but it only got one of the tomatoes. So I went and picked all the green tomatoes that my bushes had started making again......now I gotta make chow chow....and can't find a good sounding recipe.

Here ya'll go.....haven't gotten to make it yet...will do that probably tomorrow afternoon.

GREEN TOMATO - PEPPER Chow Chow
4 qts. (8 lbs.) green tomatoes, cored and chopped
1 1/3 c. (2 med.) onions, chopped
2 2/3 c. (4 lg.) green peppers, chopped
1 1/3 c. (2 lg.) sweet red peppers, chopped
1/4 c. canning/pickling salt
3 c. 5% acid strength cider vinegar
1 c. water
1 tsp. mixed pickling spices
Combine tomatoes, onion, peppers and salt in large bowl. Cover and let stand overnight at room temperature. Drain well.
Combine vinegar, water, and pickling spices (tied in cheesecloth bag) in large 5-quart kettle. Bring to boiling; add vegetables; return to boiling. Simmer 30 minutes, stirring occasionally. Remove spice bag.
Immediately ladle into 8 hot pint jars, filling to within 1/4" of jar top. Wipe jar rim; adjust lids.
Process in boiling water bath 15 minutes. Start to count processing time when water in canner returns to boiling. Remove jars and complete seals unless closures are self-sealing types. Makes 8 pints.

Lilly,i bet if you was to add a ounce or 2 of good whiskey it would add a lil flavorin to your maters and probably help preserve em too.

I been cuttin up maters for a while now.....took a break to eat supper...now fixin to get back to it.

Just drink the whiskey and it won't matter what the maters taste like. :D

Well this is what they look like so far.....recipe says to leave sittin overnight. Guess they gotta ruminate for a while lol

Lilly, what the heck is chow chow? Is it like chilly sauce? What do ya do with it once ya get it bottled? I am just full of questions. Thanks!

It's kinda more like a green picante sauce....sorta. Not to eat with chips tho (I guess you could if you wanted to lol). Mr Lilly likes it on red beans...peas....and it's HOT!!!! In this batch I think there's like 12 big jalapenos....red and green.

I finished up right before Mr Lilly got home this afternoon...in time for him to taste....he says it's good. I tried it too....it's perdy good...kinda hot..but we like hot stuff.

Lilly: You can take the larger green tomaters and wrap each one in a sheet of news paper and set in a cool dry place to ripen. The will ripen off just fine but it takes awhile. Fresh tomaters in december.

Alabama...I picked all there was on the vines. They are done. Even tho there are still blooms on em....I don't think they'll make maters. Fixin to pull everything up and turn the horses in there.
