No.....lol one night off...not shellin peas...not cannin tomatoes.....Just doin nothin other than playin on the computer while Mr Lilly watched some race on TV. Fixin to call it a day tho....we made a quick dash up to the Waco area today to pick up a Jeep motor....Kinda did the whole day in...plus it's been rainin...

We're headed to Bella Coola for the last day of the rodeo, be back this evening.
Had our grandson and his parents stay with us overnight. That was a nice treat.

Today is Mr. FH birthday. I know God had him born today so he
could remember when his birthday is. :shock: He hardly ever knows what
day it is, let alone when anyone has a birthday! Even his own. :wink: :p :shock:
Anyway, we've got friends coming for supper
and I'm attempting to cook a brisket. Wish me luck...I hope it's
not a disaster. Going to town for Brats as a back-up. :p :lol: :lol: :lol:

Even the weatherman is cooperating this weekend and giving us a beautiful weekend...A few showers early yesterday- but quit by 9AM so we were finally able to finish up branding and working calves that had been put off by the rain and flooded creeks...

Today its 70 (predicted high of 78 ), sunshine and beautiful...Grandma and I just made an ice, beer, and grandkid delivery to the lake where the kids are camped (we couldn't stay because Grandma is on call at the Hospital this weekend to take care of all the rodeo and roper wrecks)...Lake is covered with boats- and shoreline is covered with campers..

Anybody not camping or rodeoing, I think are haying-as lots of swathers going- and some baling....Weather forecast is for two weeks of dry weather- just perfect for haying.... :)

And the hay and wheat fields look better than I can ever remember...Even the bad farmers got great looking crops... :wink:

Life is Good-- have a very happy and safe 4th of July weekend...

Cook that brisket LOW and SLOW, I haven't had much luck cooking brisket.It looks so good on TV.

I will try it once more and if it doesn't work I am getting my mother's Corned Beef recipe. She was famous for it. :D

Ok, BMR, here ya go. And this was so tender, I didn't cook it as
long as the recipe said. Go figure.

Smoked Beef Brisket (fat trimmed off)
5-6 lb. beef brisket
celery salt
onion salt
garlic salt (I used garlic pepper as we like it better)
Salt & pepper
Worchestershire sauce
BBQ sauce
Liquid smoke

Pour Liquid smoke over brisket, placed in a glass baking dish.
Then generously sprinkle with celery, onion and garlic salt or pepper.
(These tenderize.)--news to me, didn't know that.

Place the beef brisket in the refrigerator overnight, covered.
When ready to bake, sprinkle both sides with salt and pepper
and a little Worchestershire sauce. Cover (I used tinfoil) and
bake for 5 hours in a 250 degree oven (very slow oven). Place
foil over top of meat and sides of pan so meat will lie in good
juices while it cooks. Then uncover meat and pour the BBQ
sauce over it and bake one more hour. (allow meat to cool at
least one hour before serving. May crumble if served hot.)

Now here is what I actually did. I had to bake a cake at the
same time, so I put the oven up to 350 degrees for 45 minutes
while the cake baked. Then I put the oven at 275 for 3 hours.
At that time, the brisket was really tender and really good. But
company wasn't here yet; so I put it back in the oven at 200
degrees. Then about 15-20 minutes before dinnertime, I added
the BBQ sauce. I almost didn't add the BBQ because the meat
was tasty. But the BBQ made it terrific.

So if you try it, you'll have to let me know how it turned out.
This was my first try and I'm going to make it again. I found
several recipes but this one seemed pretty simple.

They all said the cake was real good too. It was different, a Butter
Pecan cake mix with Coconut pecan frosting mixed right in the cake
batter with 3 eggs, 1 c. water and 1 c. oil. (I forgot the oil :oops:
and the cake was still good--it's heck to get old...) :p

we spent most the weekend behind the wheel.
Did 2 Parades Saturday, threw out well over $100 worth of candy, was campaining for a friend running for State office.Saturday night went to the ranch rodeo, this years events were, ranch saddle bron, bed roll race, grocery store race,trailer race, cow doctoring, musical ropes and a wild cow milking
Sunday , looked at Sue, didn't really want o go to Church and said "let's go to Yellowstone" it was 11 before the cooler and kids hit the truck. We had a picnic in the Park fed the camp robbers, hey Old Faithfull a little after 4 but had to wait till 5:19 for it to show off.We went out the west gate and went home down thru West Yellowstone MT. Ashton, Rigby, Swan Valley Idaho. got home around 10:30.
next time we going early in the morning.... maybe go for a swim in the firehole river.

Ya'll......cookin a brisket is one of the simplist things there is to cook...but ya gotta do it on the grill!!!!! LOL

My daddy in law taught me how it's done. And Never ever trim that fat off until after it's cooked. Really after it's sliced and on your plate....

Salt and pepper it...or use whatever rub seasonin ya like. Then sear that sucker till it looks burnt on the fat side...and just seered till it's brown on the side that's meat. Then wrap it up with tin foil. Before ya shut it completely up put a couple onions inside...along with a couple three chili peppers and a bottle of italian dressing, fat side up. Then seal it up. Cook it slow for about 8 hours. When you open that thing up.....it'll be tender tender tender. You can then slice it across the grain with an electric knife. But it's fork tender. Just falls apart.

And yes I did end up havin to pick and shell peas....and pick tomatoes and put them up. Then my fridge quit workin....Mr Lilly tried to murder it...with a can of dr pepper the other night. STuck that can in the freezer cuz he likes em cold and slushy....well he forgot it was in there n went to bed. The thing exploded...and dr pepper went down the fan spout in the back.....froze up the fan. So yesterday I spent the mornin cleanin out the fridge....so that it could be left unplugged to thaw out...and get cleaned up down that spout thingy. Loaded the dishwasher with all the lil plastic leftover bowls and such....and started it. Standin at the sink gettin ready to do maters...and I smelled smoke??? comin from my dishwasher???

Lovely!!!!! LOL When it rains it pours...dunno what's goin on with the dishwasher..that'll hafta wait to get checked out. I don't use it much anyway. Cooked hamburgers on the grill.....down at the inlaws house. Bought a big black diamond watermelon the day before.......and we didn't even get to cut it open. She'd made a cake and by the time everyone ate their hamburgers....cake...etc there wasn't room for watermelon. We'll take it to the beach with us tomorrow....I'm sure we'll get it cut some time. We're goin fishin!!!! I've never salt water fished. So....this will be a first for me. Not out in a boat like Mr Lilly did last month.....cuz I don't do boats. But peir and jetty fishin. Mr Lilly was tellin me that I need to catch sharks. :shock: Uh no.....I don't wanna catch sharks...I won't even take a catfish off the line.....what makes him think I'd wanna take a shark off????

That sounds really good, but can you cook it on a gas grill that way?
Wouldn't all that fat drip down and catch on fire??? I really
didn't want the whole volunteer fire department here. :shock:

This brisket was loaded with fat!

Yes you can do it on a gas grill. Once you seer it...then it's wrapped up and ya gotta turn the fire down.....All the juices stay right there. We always use the heavy duty type foil.

Where was I.....??? LOL read the other post I made lol
