Help!!

I need a duck recipe........ :dunce: My family doesn't care for a sweet sauce duck, but if it's easy and I have the ingredience I'm game...(pun,pun) :tiphat:

I shot a few wood ducks once,and toted em to a lady friend of mine,dont know the recipe,but I do know she stuffed them with wild rice............not bad.

back when I used to knock a few out of the sky , We save the down and just breat meat, Sue would soak the meat over night in milk , and then in orange jucie, Then she just fry it in bacon grease.
stip the meat of and brine then smoke not too bad of jerky

Prepare ducks in cold water salt brine and allow to stand overnight.Removeducks from the brine and dry throughly, inside and out.Salt and pepper inside,alsoadd some celery salt ,if avalabile.Prepare quartered chunks of apple,onions and celery inabout equal proportions and fill the bird.Sew up and take thin strips of salt pork or bacon and tie around the breast of the bird.Put in a closed roaster, breast side down,pour about 2 inches of water or consomm'e into pan so that the breast of the bird will be laying in the water.Place in an oven set to 350 degrees and bake about 3 hours or untill bird is tender.
Take roaster from oven and remove half of the remaining liquid.Turn the duck over so that it is now breast up side upand put in a 400 degree oven for about 20 minutes or untell thebreast is nearly browned.Continue to keep salt pork or bacon on the breast.If it has melted awaytoo much, put on fresh pieces.Baste occasionally while browning.

Okay..........

Here's what I did.........

I followed jody's recipe of apple, onion, and celery in the cavity of the bird. Does wire work for sewing the sucker up? I couldn't find any string other than baler twine and I draw the line there. I rubbed sea salt, celety seed and pepper all over the little bird's body. ( I think he liked it!).....I then placed bacon on breasts and over it's legs then placed it breast up to cook in a 300 oven with water covering the roaster.. I will turn the bird over at about half the time.

I'm thinking rice of some kind or maybe just some fried potatoes with bacon grease.. And butternut squash......

It looks beautiful!!!! I checked it......... Looks real juicy.. Made stuffing and did scalloped poatatoes!!! With butternut squash...... It's going to be a feast...... Thank You all for the great advice and recipes!!!

That's why you were to use the popcorn..... to save checking it.

When the popcorn blows the ducks a$$ off it's ready. :wink:
