Had a steer that got meaner than a Environmentalist at a cattleman's meeting. So we had the butcher out today. The ranch princess was present and had lots of questions.

Looks like a good chunk of meat Jeff. Always does my heart good to see the ones with the bad attitudes end up on the plate. I think its a great thing for the kids to take part in the process as well.

That mobile butcher shop is a really cool idea! Does he chill the meat as well?

The regs here would are so prohibitive that he'd be shut down before he ever got started.

Idaho Grocery??
It is local outfit owned by a Basque family. The father was nicknamed "Idaho". His given name was Ignacio. He herded sheep when he first came to this country. He got into the grocery business in the 40s my mom claims he gave her the first banana she ever saw. That was in the 40s. His kids and grand children run the store today. The make some neat stuff like marinated tri-tips, bacon cheddar burgers, and of chrorizo. Kind of neat place.

I've been around lots of Basque people in Wyoming (in fact Mr. FH brother
married one) and they are a hard-working people. They came to Johnson
County, Wyoming years ago to herd sheep and today many of them own
ranches. Good people. The hold a Basque Day celebration in Buffalo
every year and it's a really fun time. They drive sheepwagons in a parade
down the street.
