Katrina I've never dried or frozen them......I've been over run with jalapeno's this year, and have been slicing them thin like for nacho's and puttin them up in jars. Slicing doesn't fall into the "not much handling" catagory, first time I made the mistake of doin it with my bare hands. They burned for HOURS.... Since then I've been wearing rubber gloves while doin that. If you want that recipe it also works for puttin them up whole. Then you can later use them for makin salsa or whatever.

I would dry them if they were red, but for green, I'd freeze them.

And don't touch your eyes for a long long time after either....... :shock: :shock: :shock: :shock: :shock: :shock:

TB marinates his in a $500 single malt. Never seen anyone get drunk on jalepenos but this is Texas.

Never seen dried jalepenos. Keep thim in the fridge all the time in their own juices.

I did meet a guy who caught a bunch of shrimp. He dried them in his clothes dryer and then salted them down to eat as a snack. You might want to try it with your jalepenoes

String them up and hang them to dry.............
Ya know kinda like the pepper wreaths? You just have to wait till they are dried to put them in a wreath.

Katrina, I just freeze them whole, in plastic sacks.
You can cut them up while they're still frozen too.
One thing I do remember tho, they are not has hot
as they are before you freeze them. Still have a great
flavor tho. I noticed the ones outside that got frozen
weren't as hot, either.

The theory on jalopeno's or any other hot peppers is....the less water they get while growin the hotter they are. If you water them alot, they'll be milder.

Also.....if you take a fresh jalapeno.....hold it up to your ear....and squeeze it just a lil bit....if it makes all kinda crunchin noises...it's hot...if it doesn't it's not. And yes....if your in the grocery store...you will get funny looks from people. It's a fact.....I'm the "idiot" listenin to peppers hahaha

I still have a pile of jalapeno's on my bar...didn't get to em today. Maybe tomorrow.

My wife slices jalopenos real thin like that and mixes them with banana peppers and cayenne peppers....put one tablespoon of rock salt in the bottom of a jar, fills jar with peppers and pours hot water over them and seals...amazing how tasty they are..(Oh by the way, she removes the seed from the jalapenos so as not to have them too hot).

That works I have also used my food dehydrator, or you can dry them in your oven,put them on a cookie sheet and the temp very low for 4-5 hours.
But freezing canning are all great ways to store them. I like them pickled as well.

Hubby brought more home for me yesterday, I don't know who he gets them from but they are freakishly hot. Who grows jalapenos in Alberta, must have a green house. :?

I am making him nachos for supper tonight and will use s few slivers on top. Which reminds me I better go pick him up a case of beer.. :lol:

Make sure and get all the underwear out of the dryer....

Look no more hemiroids since I dry my jelepenos in the dryer!!!
