This is for 5 pints....
2 lbs small fresh okra with stems cut short
5 cloves of garlic
5 small hot peppers (any kind will do)
1 qt white vinegar
1/2 c water
8 tablespoons of salt
1 tbl spoon celery seed
1 tbl spoon mustard seed (both seed varieties are optional...you don't hafta use them if you don't like em)
Wash okra and pack 5 sterilized pint jars. Place one clove of garlic and 1 hot pepper in each jar.
Mix vinegar, water, salt, celery and mustard seeds and bring to a boil. Pour boiling mixture into each jar and seal - let stand 3 weeks before using. (There's no water bath needed with these...just put the flats and rings on the jars....and they seal)
Note: This is the recipe I've always used. It's really good. I got it out of Mr Lilly's great grandmothers hand written recipe book I found. She was born in 1882. As far as I know...this is the recipe that every woman in this family uses. So it hasta be good LOL
Also...just a tip...when your packin the okra in the jars....I always pack the first layer upside down (stem down) then the top layer I cram as many as I can in stem side up. They just fit nicer in the jar that way.
