I make spaghetti sauce and freeze it. I make it in a big roaster in the oven, with tomatoes, onions, hamburger, fresh parsley, oregano and basil from the garden, garlic, and roasted red peppers. No particular recipe, just cook the burger and onions, then add whatever until the roaster is full. Then let it cook away in the oven for a couple of hours. I'm too lazy to stand and stir it on the stove. :wink: When it's cooled down, I freeze enough for a meal in a ziplock bag.

I saw a cooking show yesterday where he made roasted tomatoes. He put Roma tomatoes, garlic, onions and herbs in the oven drizzled with olive oil, and roasted them until they were brown and carmelized. I was thinking that would be a terrific base for a spaghetti sauce. I'm going to try it this fall.

Roma tomatoes make a terrific salsa. It's easy to make it as hot as you like. Just adjust how many jalepenos and hot sauce you add. :oops: :lol: :lol: I'd bet money that you like it a lot hotter than we do. :shock:

Yes but....normally if I were to use a quart of tomatoes...I'd put 4 or 5 jalepenos in it. That's how I make it fresh....and a few onions, some garlic, etc.

If I do the same thing...and try to can it...when we open it...there's no heat. It's like somethin in the cookin and water bath process takes the heat outta the peppers.

I've got a boat load of cayenne peppers this year.....they are alot hotter than japs...I'm thinkin I'll try some of those in hot sauce and see what happens when it's cooked.

I think processing does cool them down a bit too. I put some Frank's hot sauce in mine, and that survives it better. I guess you could always toss some of that in when you open the jar too.

I grew hot peppers last year too. Boy, are they productive! I never thought about putting them in salsa. I just dried them.

Frank's hot sauce in salsa? LOL We use that stuff in a whole different way. Never put it in hot sauce....cuz of the vinegar flavor.
If I remember right....Frank's is what's used making the original Buffalo Wings from New York.

When you dry them...what do you do with them later? Do you use a dehydrator...or just let them dry naturally?

I cut them up and put them in the dehydrator. When they're crispy, they're done. They'll dry if you string them up and hang them too, they just take longer. To use them, I crush them up and sprinkle them on whatever. They're good on pizza.

This works super for sweet red peppers too. I bought a cheap coffee grinder and grind them up and use them for the best paprika you will ever have.
