Not too much of that sort of stuff grown up here. Will they harvest mechanically or have picking people? Will they be ripen on the vine or in the truck?

They should pick several times by hand - Greens first picking then greens and some Reds - more Red as the season goes on - Final picking is usually by Machine for Cannery,

I ran a BP Packing Plant for years - PEPPERS ARE PICKED in the AM - packed that afternoon and Picked-up and shipped off the dock that night...

Most Buyers will give you a Voucher Price (By Phone) the next morning - I could expect a Voucher in Hand in 2 or 3 days.

Our big Markets were in LA and Safeway Stores.

I had a good working situation with me LA Whole Sale Markets - I could Grade my Bell over the phone to them and they trusted me and most of the Boxes of Peppers were sold BEFORE the Trucks got there

This was 20 years ago - Boxes of Number 1 Peppers sold for $13 to $18 per box - with Large Red bring the most...

Wow!

For a gardener from Zone 2B, that is a dream come true. It's all we can do to get a red pepper here. I had to start mine back in March, and baby them in pots until the middle of June before I could even put them outside! I still don't know if I'm going to get any red ones yet, either.
