Potato Soup Recipe

Found a potato soup recipe online that a whole bunch of people were raving about. So I decided I'd try it for supper tonight....!!!!!!! Oh man was it good. Mr. Lilly thought it was the best. Loaded it up in the truck after we ate...and took it to his parents for them to have. Then after they ate...came home and I had myself another bowl of it.

It really hit the spot with this cold weather. We'd gathered firewood this afternoon, built a fire, and sat down with a bowl of soup. Perfect!

Thought I'd share the recipe.

1 bag of frozen hashbrowns
3 cans of chicken broth
1 can cream of chicken soup
1/2 cup onion diced
1 8oz package cream cheese
salt and pepper to taste.

Put first four ingredients in pot and slow simmer for a couple hours. Then add softened cream cheese to the pot....stir until all of it's melted in. (I used my wisk because I was impatient LOL)

Best tater soup I've ever eaten!!!!!

Thank you. I was wondering what I would serve Thursday night. I had a hole in my menu plan. An thank you for always seeming to be on the bright side. It means a lot sometimes.

Awww yer welcome flcowgirl. We all have ups and downs. But I always try my best to find the good in even those days that aren't so good. There's always somethin there to make us smile and be thankful for. Even if it's just tater soup lol

Oh an if you wanna use potatoes instead of hashbrowns....it was a 32 oz bag. Roughly 4 or 5 good size taters prolly.

buy alot of bone in ham. just leave alot of meat on the bone, keep a few bones in the frezzer. I just get out a bone and boil, later take it out chop up the meat and asked, split peas, lentils, potatoe of beans.... funny how offten at our house that spit pea wins.

I have asked my mother to bring down the recipe for Fruit Cake Cookies. They are incredible. No green things. Mostly nuts. Little cookies of Christmas Joy. I don't normally like fruit cake but these are totally different. The boys eat them like there is no tomorrow (then we tell them the name of them). There seems to be a stigma about fruit cake.
I may even talk/finesse her into making them herself before she leaves after Thanksgiving!
I will post the recipe on here as soon as I can. Make sure you have lot's of milk!

Up here we found these amazing beans from Southwest Colorado called Anazasi beans. They are plum great with ham hock or chilli or anything else you'd use pintos for. Look up Adobe Milling Company in Dove Creek Colorado and read about them. They are pretty great!

Oh we know what those are. But the only time we can get them is when we go to Fredericksburg.......
The taste the same as Pintos tho once they are cooked in the pot with the ham bone. Only difference I can really tell is...they seem to cook faster.

It is great. My 19 year old son ate his weight in it. It was easy to make and we were well fed. We put bacon pieces and cheese on top. I am passing the recipe on to my sisters. Thank you.

Glad you liked it. :D My son and I finished off the last of the leftovers yesterday at lunch. 1 bowl each. After finishin it....he said, "Mom...we need to have tater soup more often!" Haha

Here is the recipe for the yummy fruit cake cookies. I wouldn't call them that because of the stigma that fruit cake has. Maybe holiday cookies is better.
GET A BIG BOWL OUT
1 c. butter
1 c. lt. brown sugar
3 eggs
3 c. flour (use 1 c. of the flour to mix with fruits)
1 t. soda
1 t. cinnamon
1 t. nutmeg
1/2 c. milk
1 T. vanilla
5 c. large chunks of pecans (or half walnuts and half pecans)
1 lb. cherries
1 lb. pineapple
1 lb. dates
Cream butter, sugar, and eggs. Add milk with two cups flour and seasonings. Use the one cup of flour and mix with the fruit and add to cookie mixture. (confused yet?) Bake at 300 degrees about 20 to 25 minutes or until brown.
They will disappear in people who do not like fruitcake. Strange but true.

are they maraschino cherries?) but I have some frozen pitted

the cherries and pineapple are the kind you normally buy to make a fruit cake. they are in plastic containers. I guess you could say they are "candied". The dates are chopped. My mother is better at this than I am. She is a girly girl. I am a tomboy who happens to be a wife and mother! Martha Stewart here I come.

If you are going to go to the trouble of making cookies...........Why anything other than Chocolate Chip? :) :lol:
