Question for anyone who has ever cooked for one

What do you make for a meal for yourselves? I'm used to cooking for two, and I just can't justify making a full course meal for just myself. I'm hoping to hit the grocery store tomorrow, any suggestions?

I warn up Juanita's Pozole Pork and Hominy Soup $3.49 a can,
Juanita's Menudo $3.49 also - weekends Shrimp or Crab, Frozen Stouffer's Lasaguna, my freezer is full of different "Buitoni" Sauce & Pasta's where I ad Crab, Shrimp, or susuage - That ever

The Sauace's are good oner Steaks or what ever

Home alone? You could get by easily with beans and bacon, or a big pot of chili beans (go good for breakfast, dinner, and/or supper), or in a hurry just open up a can of pork and beans- they make a great sandwich.... :wink: :lol: :p

I made up a crock pot of chili today-- but again Grandma bought cans of Jalepenos instead of Chili's ( I guess they are side by side in the store in almost identical cans) and I never looked- and poured in a couple cans....And by noon the smell had the paint ready to peel off the wall...
Not bad eating- but you needed to have lots of water handy....

As I am retired & my wife who is younger, is still working, I do most of the cooking. When alone, I used to live on junk food as I didn’t want to go through all that work for just me.
Now my most useful cooking tools are my microwave and my vacuum packer. When I make spaghetti, I make extra sauce and vacuum pack individual servings. Then I can boil up a small pot of spaghetti and just have to nuke a pack of sauce. I will do the same with chili & most anything else.

I also don’t mind leftovers so yesterday I took a roast (this one was a pork roast) & put it in a large roaster pan with potatoes, onions, baby carrots, celery, & green peppers. I covered the roast with strips of bacon & then poured cream of mushroom soup over everything & baked it slow. I have had 3 meals from it so far as I use reheat on the microwave. (I only reheat one portion at a time while the rest is refrigerated) This way I get a decent meal with a little of everything and I’m not hungry an hour later.

This is the only way for me to avoid junk food all day.
(my wife loves my cooking, now if she could only get me to clean up after myself!) :p :lol:

This can be kinda tough. It is hard to shop for a one person meal. Some items just don't reheat well and I don't find real joy in eating the same thing 3 days in a row. If items do come in single serving size, they are usually more expensive. I'm not a big bread eater, other than toast, and it seems like I often toss the last half of a loaf due to invasion of the color green. Some quick meals that I do are cornbread (johnny cake) with syrup, mac n cheese with a hot dog or baked beans, spaghetti, (that reheats well), and of course of all sandwiches the PBand J is a topper! I have tried a few times frozen entre's, but just can't understand how that classifies as food. A good hearty hot breakfast will take you a long way. I will also enjoy waffles from time to time. A single pork chop baked along with a potato and some vegies is an easy one that can be portioned properly. And of course, there is always "rabbit food" covered with raw vegies, chopped meat, egg, or whatever. And cereal, lots of cereal...and that is only one bowl and one spoon!! I usually have to repackage the beef/pork that I buy so that I can manage it for one meal. Bon appetite!!

Cook one steak instead of two. :D

Make some Chili and freeze portions. Meat loaf is good hot or cold.
My dad cooks lots of Bacon and eggs.
Micro wave a potato,

I'm afraid if i went back cooking for my self nothing would be very fancy but I do enjoy doing Ribs and roasts and steaks. :D :D

You have to use your imagination a little Sundancer. As in the example of my roast, you can slice the potatoes the next day and fry them in a little butter. Sprinkle a little grated cheese on them and use a few spices to kick them in the butt a little.
You can take a slice from the roast and chop it up and reheat it with a little barbecue sauce for a sandwich. Use it to make pork or beef (depending on the roast) fried rice. Your imagination is your only limitation! :) I am not afraid to try anything. :shock: :lol:

Even tho it's not very often that I"m alone, we do have "fend for yourself night" where everyone gets to fix whatever they want.

Sometimes that's a grill cheese sandwich for me

Or...I'll grill one chicken breast and have a chicken salad with carrots and cheese, tomatoes...whatever I've got to throw in there.

If this is gonna be an extended amount of time, you could always go get some of those small freezer safe plastic containers, and just make up a few normal meals, then freeze what you'd eat in one meal. That way you don't hafta learn all over how to cook just for one. :wink:

A brand inspector buddy of mine used to buy a dozen cheeseburgers at a time and just freeze them tomicrowave later. He was an honest 300 pounder -the kids at McDonald's used to get the funniest look when he'd orderlol. Not reccommending that for you though. I'd just start having dinner at the Robin's Nest or lemon pepper wings at the Vanscoy Hotel lol.

Shelly I would come eat with you but it is way too cold up where you live. I like to cook big pots of things like soop and camp stew then freeze in one serving size. that way supper is just a microwave away.

I don't really like to cook, so when Mike is gone I start out by eating all the leftovers in the freezer (no...not all at once :p ). Then I will eat things he doesn't like, like liver and onions or spinach. I don't mind eating the same things more than once so I usally make something that has leftovers.

Come on down and visit then you won't have to worry about cooking :)

Thanks for all your suggestions. Did I mention I hate to cook at the best of times? :) Hopefully, this'll just be a short-term situation, and John'll get tired of playing with his oversized Tonka toy and come back home.

Mac n cheese with seasoned hamburger and salsa- yum, side salad. I agree with several, cook for 2, freeze half, cook something simple like soup and sandwich, eggs different ways, a steak and salad is simple and wonderful. Hamburger (with a bun), stuffed hamburger, chili dog, all w/veggie or salad. You can tell I'm a junk food junkie :wink:

Here ya go....it's almost a weeks worth of meals in one pot.

Make a pot of chili....normal size.
First night...have a bowl of chili
second night, frito pie
third night chili dogs
forth night stacked enchiladas.....what's that you might ask??? LOL
Take corn tortilla's....fry them just until soft in a small amount of cooking oil...layer them on a plate with chili, cheese, onions and salsa. I use velveeta cheese with these, but hubby prefers cheddar cheese.

By this time your pot of chili is gettin kinda low....if you'd like to make it go even further, throw in a can of ranch style beans. Then with that....you can make cheese enchiladas and use the chili for your topper. Instead of enchilada sauce.

A pot of chili around my house never seems to last long enuff to do all the above mentioned things. But...there's always a choice as long as there is any chili left in the pot. LOL
