Mike I know what "Boudin" is, but deer sausage just so hard to make and it have moisture, you hafta get your hog/deer ratio just right or it'll be dry.

here's a link to a boudin recipe that looks perdy good, but it's for pork not deer......if it were me and I was making it with deer meat I'd do a 40%deer and 60% pork combination to keep it moist.

aww at least some ladies know how to cook here lol. Thank you much Jersey Lilly. We make about 500 lbs of sausage a year so like to try different things

You won't even know your eating venison-I just fooled my track hoe operator-I'm pretty fussy about how I handle wild game-most people can't tell when they eat it here. When I see some of the stuff guys bring into the butcher shop I can see how people get turned off for sure. We never cook anything with a scrap of fat or a bit of bone in it seems to solve the wild taste problem-I don't leave it hang for ten days either-in fact some tenderloins hit the frying pan still shaking lol. So when you coming to visit I'll start reinforxcing things so you can let your hair down lol.

Deer is nasty!!! I get dry heeves real easy....
Although I will need to get a visa to come and see ya, so guess I won't be coming to see ya on a wim....

I've had my fair share of "bad deer" but if it's fixed right, it's some mighty good eatin. Whether it be in the form of sausage, or deer steaks.....smothered with gravy.......ok now my mouths waterin.

A visa why not just pay cash lol. I don't think you need any special paper to travel north unless you've been naughty previous. Better get up here before they start building the big fence lol.

Won't you be surprised if we get stuck in canada!!!

They're talking about having a $35 special ID instead of requiring a $95 visa-- but it will take the whim of the moment trips away, because you will still have to apply a period of time ahead to get the ID card.....

well we can't have you Americans smuggling Vigartone and generic ivomec up here lol. What a total bunch of B.S.-total waste of money for both governments. I saw the border meanies checking out all us terrorists at the Plentywood Fair.

Any of you that don't like deer ,come to our place I'll cook some for you. Our deer is grain fed,not spruce needles...awesome meat :nod: It ain't beef but its close :!:

Our deer around here is corn and acorn fed... FAT and tender aslong as you don't eat 5 year old bucks during the peak of rut who are all stinky and greasy, lol... Deer is good, a little stronger flavored than a grain fed 16 month old steer, but good...

The only sausage we ever make around here is pork and it tends to be chorizo... Yummy.

Yikes! That's a mess of sausage! Does your family eat all that up in a year??
