Roasted chiles

since the weatherman said it was going to get cold and wet, I went out and picked the rest of the Anahiem Chiles before they get frozen. Then you roast them and peel off the waxy hard layer and put them in the freezer. Nothing like the smell of chiles roasting on the grill. UUUUUMMMMMMMMM Now that it is snowing outside, guess what, a pot of chile is on the stove. :p :p :p

yuppers, the white stuff. This is pretty early for it but it has been so dry for soooooo long any kind of moisture is good. It has never stuck cause the ground is not frozen but it dang sure is the white stuff. supposed to be 32 degrees tonight. I'll bet it warms back up and we will have a nice Native American summer (being PC) just in time for the elk rut.

Looks good sw. I love south of the border cuisine. Being politically correct too. :wink: I did have lunch at Taco John's today, but would have preferred a more authentic Mexican meal.

Oddly enough I have a pic of me eating a taco johns taco going down the road. :lol: It's a small world. It's a thousand miles away.

The neighbor just gave me a bag of Anaheims so that's on my to-do list to! My garden has been covered for the last couple nights. I said I wasn't going to cover it...but couldn't help myself :wink: Still need about 12 more qts of pickles to get us (and the relatives) through. And LOTS more salsa to make. If anyone wants jalapenos or hungarian wax peppers come on over...they really produced this year. :) You'd like them Red Robin, the guys in elk camp couldn't eat them last year! The jar came back full :p

The jar wouldn't come back full if I'd have been there Nicky. I'm a tough mouthed old man I guess. I put tabasco on my eggs in the morning, not that tabasco is very hot. I use crushed habanaro instead of crushed cayanne for my red pepper. Good stuff.

Red Robin, I looked to see how many Taco John's restaurants are in SD, and I see there are 39. Only one in AR. That is probably why you were not too familiar with them. I thought everyone knew about the "cowboy monkey" Whiplash. My kids love him. We saw him once in Rapid City at the Stockshow.

So there you are. :wink: :lol:

We have a few here and there in Illinois and a bunch in Iowa... I'd take it any day over most of the fast food mexican places but the tamales the wife of the guy who works for me makes are soooo much better... Of course, she takes pity on my gringo taste buds and doesn't go to spicey...

sw, you're 110% correct about the smell of chile roasting on the grill.........YUMMY!!!!!!!!! I sure miss it, now that we get ours already roasted and frozen.......convenient, but I sure miss the aroma....... :?

easiest way to tell fall in New Mexico is the wonderfull aroma of roasting chile's coming from just about every grocery store, and in places street corners.

That sounds great to me Ranchy. Taco's are about as wild as we get around here. No one else likes the hot food in my house. I have to go to a very good restaurant in Spearfish called Guadalahara's (probably spelled wrong). They are the real deal, and great food. Just don't get there enough for my style.

I might have to try and grow some of those peppers like you all do.

Thanks Tap. I thought Taco Johns was a road side taco stand. Didn't realize it's a chain. Not bad food.

Tap you need to make a road trip when things slow down and come over and have some Chile Relennos, home made flour tortillas, Mexican eggs, some of the good stuff. When we were still going to school in Bozeman, we befriended a Mexican irrigator and his wife. His wife taught Hanta Yo how to make tortillas, salsa and all the good stuff. His mother could not speak any English so she could not teach us anything, they had us over for New Years day, that old woman made tamales of all kinds, family tradition, there were bean tamales, beef, hot and spicy, dessert tamales that were like rice pudding. It was great.

I lived with my folks in Mexico City when I was somethink like 8 months old for about a year, something to do with the business my Dad was in needing to set up a new office or something.. Who knows... But my mom came away with great recipies for Churizzo and some strange Cilantro.Garlic relish along with a bunch of other recipes so we would get some good Mexican food growing up...

But the hired guys wife, man... She is some cook..
