So what kind of cookies are you baking for Christmas?

I'm looking for inspiration to get me moving in the kitchen...which ones are your favorite must-haves?

We always make sugar cookies, using cookie cutters. We make frosting, then put portions of the frosting and add different food colorings. MCG and I like to spend some time to each cookie, for example: Santa Claus cookie would be red and white with a black belt.

We also make Mexican wedding cakes, and peanut blossoms.

I mostly make candy, though. No-Cook mint patties, Caramels, old-fashioned butterscotch, fudge (NOT using marshmallow creme) Taffy, divinity, and peanut brittle.

We're pretty busy this time of year. Hopefully I can get some baking done.

I make the best kind of Christmas cookies...I make a call and the neighbor lady brings em over..lol and she makes at LEAST 15-20 different kinds each yr...yummy! :wink: :wink: :wink:

Hanta, I'd be big as a barn if we had all that candy around! But you jogged my mind about a recipe for walnut toffee my sis sent last year that begs trying.

Jassy- :lol: :lol: I had to laugh- you almost sound like a New Yorker dialing up your food! :wink: Hope you don't strain your pinkie.lol

Must haves...shortbread cookies,thimble cookies,Mcintosh marshmellow ,butter tarts...then I always make two different kinds of nuts and bolts and Jalapino tarts.I also make peanut brittle,white chocolate candy cane popcorn,fudge and snowball candy. Most of the candy and cookies get put on Xmas chinet plates and given away to friends as gifts.

Sad but true...I wasn't always a "stuck out in the middle of nowhere ranchwife."....I lived in a city with lots of takeout..lol Trust me..the neighbor gal feels sorry for hubby, that's why she is so sweet in giving us all her goodies... :)

Sounds like you've had a very interesting life sampling different places.
A friend usually comes over and we bake cookies together all afternoon which is more fun.

If I don't make shortbread I'll be drummed out of the family. :shock: :D :D :D

Other must haves include butter tarts, Nanaimo bars (U.S. name is New York Slice, I think), and my high octane rum soaked fruitcake. That's being baked tomorrow, but I'm probably a bit late. I like to let it "ripen" a bit longer than three weeks if I can. :D :D :wink: Once I get the basics made, I like to experiment and try out some different recipes. If they're really good they get put on the must have list. :D

Besides the sweets, a couple of hundred perogies in the freezer for emergencies are the law around her. mmm......

Kato, your Nanaimo bars reminded me that nobody mentioned 7-Layer Cookies here. They're a quick and standard Christmas fare here and travel well.

Our son-in-law was craving an anise cookie his deceased Grandmother always made for him- a huge cookie ( made with lard) and covered with thick anise flavored icing. So as a surprise after finding what looked like the possible recipe on the internet his daughters and I made him a box. He was so excited and said the only difference from his grandmother's was she made them into Santas! The cookies were all eaten by the time they drove home our daughter said. :D

They're so easy I don't have to look up the card:
take a sheet pan, like lasagna- sized,and one stick margarine or butter and melt it in the oven. Don't let it burn! Been there, done that.

Then add enough graham cracker crumbs to (almost) cover the bottom making a thin crust. Dump on a bag of chopped walnuts (or other), a small bag of coconut (sometimes we omit that), a bag of butterscotch bits, a bag of choc bits then take a can of sweetened condensed milk and drizzle the whole can over the top.
Bake until slightly browned around the edge of the pan. Cut into squares when cold. Store in refridg. These are almost as sweet as fudge and go fast!

YUP! that's what I do with all the stuff I make.....put them on those neat plastic plates you get at the dollar store and go around to all the neighbors and give 'em away :D

Christmas baking and cooking is the time of year I really get into. My aunt and I have a whole day we set aside to bond and create goodies. We make elephant balls, homemade carmels, English toffee, bavarian mints, glass candy, sugar cookies we cut out and frost, and even goodies like snack oyster crackers, chex mix, popcorn and pretzals covered in almond bark..........the list just goes on.
