strawberry salsa

I don't know how to make it but I've had two batches of it in the past couple weeks. It's my new favorite. Mmmmmm good stuff.

Your wish is my command :) You must and I repeat must toss on TONS of heavy creme to get the full effect. Down it with a lovely coffee with Baileys :)

Saskatoons are known as service berries in the states, not really sure why but sorry if there is any confusion :)

INGREDIENTS
4 cups fresh saskatoons (the ones picked by a creek are always the best) Watch out for Grizzlies ! good luck keeping your dad out of the berries when washing, hes a slick son of a gun and will only happen by on pie baking day cuz he's not dumb!
1/4 cup water
2 tablespoons lemon juice ( use reallemon stuff dont bather spending the day squeezing real lemons)
3/4 cup white sugar
3 tablespoons all-purpose flour
1 recipe pastry for a 9 inch double crust pie ( I can't make pie crust to save my life so I use the store bought ones)
1 tablespoon butter
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
In a large saucepan, simmer berries in 1/4 cup water for 10 minutes. Stir in lemon juice with berries. Combine sugar and flour together in a medium bowl, then stir into berry mixture. Pour mixture into a pastry lined 9 inch pie pan. Dot with butter. Place second crust on top of pie; seal and flute edges.
Bake in preheated oven for 15 minutes. Then reduce oven temperature to 350 degrees F (175 degrees C) and bake for an additional 35 to 45 minutes, or until golden brown.

Mmmm,next to Apple pie Saskatoon is my fav. your recipe looks just like mine Judith,I love lemon in it,lots don't add the lemon.By the amount of moisture we have looks like it will be a great year for the Sakatoons and Chokecherrys.

Red Robin,heres my Strawberry Salsa recipe.

1 pint strawberrys
4 tomatoes
1jalapeno pepper
1green onion
1-2Tbs cilantro
1tbs lime juice,mix altogether,let sit for a couple hrs.

Since your Mrs. gave me that great Okra recipe,I owe her this one...enjoy it :D
