It doesn't matter where or in what form the imports come...the goal is to keep live cattle prices in the USA in check or depressed.

There is a demand for the product minus the middle men we must develop it. No one is going to do it for us. If enough producers go this way then the tides will turn and only then.

There is demand for beef and there are plenty of consumers that will pay the price, but there is a growing distrust of large/global food corporations to provide a safe product. Consumers trust producers and, as you say, we need to take advantage of it. Nothing will change until a substantial portion of beef sold is by producers through direct marketing, co-op marketing, or private branded labels...I believe it will take at least 30-40% of market share. Unfortunately, I don't think packers are worried.

Good info on the cooking...225 F is my target temp and I use a fire-box cooker. I haven't cooked any pigs, but I'll pass this on to my buddies that do...they aren't cooking long enough.
 
When the BSE scam closed the Canadian borders consumption rose significantly here. The consumer was credited with supporting the producer, and it was much appreciated, but unfortunately all the profits went to the packers and retailers. I personally think the consumption increase was due to a much better quality product as a whole because they couldn't ship it all out. At that time you could order one of those crappy little steak sandwich specials and get a real nice piece of beef, not the usual cheapest available no roll shoe leather usually served. Once the border opened , we were back to eating cows again and consumption promptly declined.
I don't know where the good beef goes but there is no sign of it around here. If I hadn't seen the quality improve so noticeable during BSE, I would say they ruined it all at the plant with the cryovac. No doubt that makes it stink.
I call it the Wal-Mart effect. Everything is just barely good enough, but if they soon run anyone selling quality out of business.

The guy who Ty's supposed to guide for in Alaska lives in Minnesota so you just never know lol. I've ended up in other places I never thought I'd visit lol. No specualation as to what they were please lol.
