Turkey Day and V_Key doesn't like turkey _ what do I cook?

A Post on Ranchers.net got me to thinking - Sweet Potato/Turkey Soup
I found this Sweet Potato Recipe But I'm going to add Turkey Thighs...

The Thighs are in the Slow Cooker - after they cook down so I can pull the bone out I add



4 pounds 4 large sweet potatoes, unpeeled and quartered
- 1 large onion, chopped
- 3 cups carrots, peeled and chopped
- 1 cup celery stalks, chopped
- 5 cups chicken broth
- 1 tablespoon canola oil
- 1/2 teaspoon dried oregano leaves
- 1/2 teaspoon thyme leaves
- 1 pinch freshly ground nutmeg, a few grinds
- 1/2 teaspoon ground cumin
salt and pepper to taste

Serving Size: 1 cup
Servings: 12
Enter desired servings:
Container: 5 quart pan
Prep Time: 45 minutes
Cook Time: 45 minutes

Fill a 5 quart or similar-sized pot with enough water to cover the quartered sweet potatoes and add 1 teaspoon of salt to the water. Place unpeeled potatoes into the pot of boiling water on a low boil. Cook until tender. Drain potatoes and water from pot using a colander. When potato chunks have cooled, remove potato skins by hand.
Using the same 5 quart pot, add oil, carrots, onions, and celery. Set burner on medium heat. Sauté ingredients until soft. Add broth and sweet potatoes. Bring to a full boil befor reducing heat; simmer for 40 minutes.
Add seasonings while simmering. Before removing from heat, additonal seasonings, if needed, to taste. Add extra water or chicken broth, if the consistency is too thick. With an immersion blender or food processor, purée until almost smooth.
Reheat before serving.

Oh I love me some good Turkey. And by 'good' turkey I mean....it hasta be cooked just a certain way or it ain't good. I don't eat alot of it....but I am always ready for it by the time Thanksgivin rolls around.

Found a recipe for Turkey enchiladas for leftovers....think I'll do that with it when we're done eatin just turkey.

Kids are invited at the neighbors.

I'll be at work keeping the City safe whilst others are gorging on toikey.

We aren't high on turkey either. (Besides that, it makes you sleepy.)
Our friend in Oklahoma cooked a smoked turkey for Thanksgiving
once when we were there, and it was delicious! I found a smoked
turkey breast...so we'll probably have that...I usually only cook
turkey breasts anyway.

Here is a great recipe for leftover turkey.
Use the leftover dressing;
cut up leftover turkey and add to it, pour leftover gravy over the
top and bake in the oven in a cake pan or something similar.
Take it out when it's crispy if you like
crispy dressing or take it out sooner if you like softer dressing.
It's really good!

Smoked turkey tastes like ham. I like it...but not for the traditional Thanksgivin meal. I want my turkey baked in the oven. And a fried turkey ain't worth eatin to me.

Some my think I way over cook my turkey. But I cook it over night and by mornin that bird is layin down in the pan. Falls completely apart. Ain't no "carvin" goes on...you just hafta debone and eat.
