When one goes out to eat at a restaurant, they expect to be eating food that has been prepared under the most sanitary conditions. This said, how many of you stop to wonder what actually does go into making your food?

It is being reported by federal authorities that hundreds of Chicago employees of restaurant, grocery and food-service establishments have been busted for bribing a certified instructor, to get out of manditory training pertaining to food-borne illnesses and proper food preparation.

As a result, two former Chicago Public Health Department inspectors are facing charges relating to fraud for allegedly ensuring that food-service sanitation
certificates were issued despite the fact that the required training to acquire those certificates was not carried out.

"The point of requiring a state and city certificate is to protect our health by ensuring that those in charge of handling food -- whether in restaurants, schools, hospitals, or other places -- have been properly trained," said City Inspector General David Hoffman, whose office participated in the probe. "But through their fraud scheme, these former city health inspectors increased health risks by allowing hundreds of these individuals to bypass the rules."

The required training is comprised of 15 hours of training including lessons on how to prevent food from becoming contaminated.

Facing charges are; Maryanne Koll, 64, and Robert Henry. Koll is charge due to her faking nearly 600 applicant course completions, and Henry is charged due to him referring people to her and then splitting the profits.

It is being reported by prosecutors, that for each applicant that came to Koll, she charged between 300 and 400 dollars for her services.

Koll and Henry are each charged with a single count of mail fraud. The alleged crimes occurred between January 2003 and May 2007, prosecutors say.

Prosecutors also stated that they have forwarded the names of the people who did not do their required training to the appropriate state officials.

Koll's attorney, John A. Meyer, said he will seek to have the charges dismissed because, "This is a state offense, not a federal offense, and I don't think there is jurisdiction in federal court."

If convicted, Koll and Henry each face up to 20 years in prison and fines of up to $250,000, the release said.
