Watermelon Hooch

Out of necessity, a friend and I decided to start a fermentation process on Saturday:

1- Watermelon meat is carefully placed into a sterilized container:

2-After measuring the exact amount of Sodium Bisulfite and sugar, the primary fermentation container is appropriately placed in front of the bar for the next step of adding the yeast 30 hours later. It's much too hot outside for the yeast to perform properly:

Forgot to add........You can hear the bubbling this morning!

 No. The boat paddle is not in the picture. It is a freshly carved piece of ash.

Send a bottle up, I will sacrifice myself and sample it before you to make sure it is safe.

Sure thing, Brian. But it will not be put in "bottles".

The proper shipping vessel will be a "Quart Mason Jar".

I gather the watermelons are grown by you? I think we could have grown them this year with the heat we're having. I believe you should send some up and I'll get a hold of some chockcherry wine from the hoots to send you....we'll compare

Yes Katrina, I have to give you the award for ingenuity when shipping booze!

This is not a still. It's a "Primary Fermentation Vessel". Let's be a little more precise in our terminology, OK?

Yes Mrs. Greg. I had no idea how many watermelons my little patch was gonna make..........Besides, the cows love 'em.

Next time you have a truck in the area, send it by! I'll fill it up!!

What about seeds? Did you leave the seeds in or just the juice?
Are we making wine?

Seeds, pulp, juice, and everythang is in there. The seeds hopefully will add some acid/tannin to it for proper fermentation, just like grapes.

Will put the hydrometers to it when the ferment stops/slows and make a determination about wine then.

Might cook/distill it in the end. Just don't know yet. Give it a week or two.

Might do some of both..................................

I hate to wait a year on wine.

Mike, Fruit wines should be drank by 6 months..... And on fruit wines the longer you keep the wine the worse it will taste..... Actually my wine conisuer says 3 to 6 months on fruit wines.........

Depends on how many times you rack it and how dry you want it.

Personally, I don't like sweet wine with that junk in the bottom of the bottle.

Is watermelon a fruit?

Damn good question, is watermelon a fruit...... If you want a good wine let me bring you down some wheat for you to make some wheat wine... I think you would like it much better than fruit wines.....
You don't like a sweet bouquet??? Nothing like having a sweet wine buzz and listening to a southerner talk.... Pure poetry.......
Mike say blue tounque..........LOL :D :D

You put that fresh wine in fruit jars with lids and rings on, you'll blow the post office up. You better let that stuff settle down some. I remember as a kid I made some, dad found it, confiscated it, and promptly blew blackberry mash/wine/whatever ( I was a junior brewmiester at the time  ) all over his closet. Suits and all. He didn't find the watermelon. We snuck it to the lake, tried to drink the rotted stuff and then stuffed it in our sleeping bags where he found it, after it blew rotted smelling melon juice all over our bags. That was my last experiment with making drink.

Oh heck yea. But the mash slowed down yesterday and had to add some more sugar. Have used 60 lbs. so far.

Must not be much protein in a watermelon because I'm not getting any foamy stuff on the top at all.

Alcohol is sitting at around 8% now. Pretty low.

Come on little yeasties, make some more alcohol!
