It is interesting that the food industry went to the "best taste" over quality and are now going back to quality. When enough people see the shortcuts the food industry has taken in presenting a product, and they are educated on the consequences, things change.

If we could only make it happen with a quality grade and food safety that is passed on to consumers, the industry would do a lot better.

After all, the consistency in poultry quality is continually cited as one of the reasons people pick poultry over beef. It is therefore funny to me that the AMI would not encourage a good quality grading mechanism THAT IS PASSED ON TO CONSUMERS AT THE RETAIL LEVEL coupled with a good education program to promote beef.

THE USDA HAS FAILED AT ITS CORE MISSION.
