I just wanted to be sure......THe place i have my calves done is USDA Inspected. I am pretty sure they have had it that way for about 15 years....
They are by no means new to this. The couple that own it have had a butcher shop for 40 years and just did the USDA deal 15 years ago....
THEY HAVE NEVER HAD AN E-COLI RECALL...
I asked Bud about this. He said he felt it came down to the following. He feels not only having a great HACCP program is important, but following it. He doesn't mix big batches, all the burger is done a calf at a time. He also pays very close attention and prays a lot,
