Disappearing Chili

1 onion
1/2 lb ground beef
2 Tblsp chopped green pepper
1 can kidney beans
1 - 8 oz can whole tomatoes (with liquid), chopped
1 pkg dry chili mix
1 can biscuits
1/2 Tblsp oleo
1/4 c. crushed corn chips
(cheese flavored)
cubes of cheddar cheese

Brown ground beef and green peppers. Drain and stir in beans, tomatoes and chili seasoning. Mix well, continue simmering while mixing. Place in 9x13 inch baking dish, take the biscuits and fold biscuits over cheese cubes and seal well. Roll top and sides of biscuit in oleo. Coat with corn chips and arrange over top of hot meat mixture. Bake at 375 degrees for 20-25 minutes or until brown.

(Note: I have found its better to cut the biscuits in half and then fold half a biscuit around each cube of cheese. Also, its always taken longer (about double the time) for the biscuits to turn golden brown. Buts its a easy dish to make for those potluck suppers especially those fall trail rides.)
