Mexican Rice Casserole...Quick Dish

1 1/2 lb of hamburger
1 or 2 Can of stewed tomatoes
2 Cups of Minute Rice
1 Cup of Hot Water
1 Chopped Onion
1 Tbs Sugar

2 Cups of Shredded Cheese

Seasonings(to taste): Salt, Pepper, chili powder, garlic..and I use Cajun seasonings and leave all but the salt and pepper out.

Sautee' onion and garlic, add hamburger and brown, add seasonings to taste. Then add the tomatoes, rice and hot water, bring to boil. Turn temperature to low and Cover to simmer about 30 minutes, or until rice is done.

When Serving take grated cheese and sprinkle over the top...

You are done ;)

Some Changes I have added for us is...I add whole corn, pinto beans, sometimes that can be ranch style beans to the dish. My kids love it.

Suggestion is to eat with crackers or tortillas....
