Only for those that really really love chocolate.
Flourless Chocolate Cake
4 ounces bittersweet chocolate (not unsweetened)
1/2cup butter
¾ cup granulated sugar
3 large eggs (I used 4)
½ cup unsweetened cocoa powder, plus additional for sprinkling
Sweetened whipped cream (optional)
1 Preheat oven to 375*F(I used 325* being higher up the mountain) Butter an 8-inch baking pan and line bottom with a round wax paper, butter paper.
2 Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring until smooth. Remove top of double boiler or bowl from heat and whisk sugar into chocolate mixture. Add eggs and whisk well.
3 Sift ½ cup cocoa powder (I added a couple table spoons more for the altitude) over chocolate mixture and whisk until combine.
4 Pore batter into pan and bake in middle of oven for 25 minutes , or until top has formed a thin crust, Cool in pan on a rack 5 minutes and invert onto a serving plate.
5 Dust cake with additional cocoa powder and serve with sweetened whipped cream.
I baking two of them then making a frosting with butter and nutella for my wifes B-day Cake
