Southern Style Camp Stew

Start out with 6 big hens in the pot. Boil them down for broth then remove.

Add 30 lbs Potatoes and 20 lbs. Onions

Add other ingredients, tomato sauce, corn, butterbeans, 6 smoked Boston Butts, the Chicken meat, etc.
Simmer and stir for about 4-6 hours and there you have it.

Add a dash of this and a dash of that. Time to eat.

Well that looks like a great appetizer - what's for main course? :lol: :lol: Fill in the cracks with a big slice of pecan pie, maybe?

Do you peel the taters or scrub them and toss'em in? :wink:

We eat it with cracklin cornbread. Nothing else except maybe some collards, hot peppers, and bar-b-que.
Pecan and sweet potato pie was for dessert of course. :wink:

Some people put okra in their stew, but since Red Robin wasn't here I left it out. :lol:

Taters? Peeled and diced. Took awhile too. :shock:

I'll eat stew without okra but I won't eat cornbred with cracklins. I've baited way too many traps with a kid. Can't keep from gagging at the smell of sardines or cracklins. :shock: How big of a pot is that mike? Do they measure them like wash tubs? That's a dandy. My wife would give my right arm to own one. :lol:

This is the small one. Works good for frying fish too. It holds 25 gallons. Got a syrup kettle that looks about the same, but bigger around, that holds 100 gallons.

Takes 4 to handle it though.

I don't know how they measure washpots, but my Mom has a washpot that is perfect for making gumbo (with okra). :lol:

It holds about 5 gals.

MMM,that looked good,just how many people do you feed with that menu? My son has always wanted me to make a sweet potatoe pie,anybody want to share thier recipe???His B-day is in a couple weeks and I'd like to surprise him with one.
 
I make camp stew just a little different.
Take some of the lesser cuts of beef like the ribs or a lesser roast and boil with chicken and maybe some pork, some like deer but I don't add deer to mine because the kids won't eat if I do.
Well boil it until it just all falls apart and remove the bones. Add tomatoes and corn both creamed and whole. Add some onion and taters with salt and pepper. Add some barbeque sauce.
It should look like Mikes.

I use the smoked butts because it adds a smoky taste to the stew, which most folks like, plus, when you boil the pork for making broth, it adds too much grease to the final product.

I don't be liking me no greasy food. :wink:

We sometimes use beef, but when we do, it's ground afterwards because of the stringyness of boiled beef.

Made some using guineas and rabbits few years back. Everyone said it was my best batch ever. :lol:

Come by and get yourself a quart or two of this.

I helped Mr Lilly's granny can deer meat with gravy, many times. And I so wanted her GIANT pressure cooker, but.... :cry: someone else got it.

We put it in styrofoam containers w/lids and freeze it.

Canning it would be a viable option, but the freezing is easier and we don't have to keep up with jars and such.
 
I'd really like to get back to puttin up more of our own stuff in jars. It looks so pretty in the jars. Plus....our freezer gets filled up when we butcher a calf so there's not much room for other stuff in there. We are in the process of tryin to get another freezer tho.
