A cooking question: cow tongue

I love cow tongue stuffed and pot roasted. Makes that wonderful dark gravy to cover your rice dressing or mashed potatoes.

But has anyone ever had cow tongue thinly sliced, battered in flour and fried? Just wondering. I've tried about everything from beef to Canada goose breast fried, but have never had cow tongue fried.

Anyone?

You've never had beef tongue? It's delicious, and like I said, makes are really dark gravy as well. It's just a muscle, like the rest of the flesh.
 
We always boil and skin it. After it is cooled we slice for sandwitches. With a dab of mustard on some homemade bread it is one of the better cuts of beef! :cowboy:
 
I have several in the freezer, I have yet to try it. We have a really good jewish deli about 20 minutes away, I was thinking of seeing if they would buy them, they always have a tongue in the case.
 
Never had it fried. Had it the other ways mentioned here tho.

Here's a recipe which includes fried tongue:

Ingredients
•1 cow tongue
•1 large or 2 small leeks
•1/2 an onion
•3 carrots
•1/2 red bell pepper
•1 tomato
•flour
•2-3 eggs
•salt
•white wine (optional)
Instructions
1.Coarsely chop up all the veggies and place them in a pot with just enough water to cover them.
2.Place tongue in pot (the cow's, not yours). It's not that important that it be completely covered by the water, because you can turn it a few times while its boiling.
3.Add a few pinches of salt (2-3 teaspoons?)
4.You can optionally add about a glass of white wine, as well
5.Boil for 60-90 minutes, depending on the thickness of the tongue.
6.Allow to cool
7.While it's still warm (it's easier when warm), remove the skin from the tongue.
8.Cut into thin cross-section slices. The thinner the better.
9.Purée the vegetables in the pot. We use a handheld mixer (see photo below).
10.Bread and fry each slice
1.Heat oil in frying pan (we use sunflower oil)
2.Pour some flour on a plate
3.Beat 2 or 3 eggs in a bowl
4.Cover each slice of tongue in flour
5.Dip each slice in egg
6.Place each slice in hot oil until golden brown
11.Place each breaded and fried slice in the pot with the sauce
12.Simmer on low heat for a few minutes to let the flavors mingle
13.Serve with a healthy serving of silly tongue jokes.

I Googled that and could find no good answer for what it was....explain please? and yes I eat eggs, but I'm picky about how !!
 
OF course we fry it down here!!! slice it up, mix eggs, flour, seasoning, and a little bit of LA Fish Fry and go to town. Best ever. Whitewing, dont be tellin everyone about those signature Louisiana dishes. They prolly all think we cook like those hadias in New Orleans.

Debris etouffee is a dish we make in S. Louisiana with beef tripe. It's really tasty....sort of sweet.

Here in Venezuela, beef tripe is very popular as well.......especially sopa de mondongo.

As for the egg comment, I was thinking of that Archie Bunker episode where he told meathead he'd never eat anything that came out of a cow's mouth........give him a couple of eggs instead. :lol:

Boy, you got that right. Our cooking back home is completely different than what you find in New Orleans.

Hey, thanks for that recipe. Can I use Tony's for the seasoning? :wink:

Yes I have been kissed many times by a calf or cow but I was NOT EATTING it at the time eeeeuuuuuuu
