Simplistically...
Muscle requires protein.
Fat requires starch.

Cattle are fattened on grain(starch).
Look at the USA population on their low fat/high carb diet!

That's a bit of an apples and oranges comparison, especially when comparing a monogastric to ruminant species.

Well RM, I'm here to learn. Would you share some of your insight and experience?

The way I look at it 75% or greater of the bovine's metabolic needs are met through the use of rumen by-products, with the C2, C3, and C4 VFA's being utilized mostly as energy, but some enzymatic conversion of the C3 to amino acid does occur. Are you talking about rumen bypass protein? This is coming from a lab rat, so as I said, I'm willing to learn. Thanks.
