Chilli Recipe

When Robin starts taking orders for the delivery of the crawdads, put me on the list! :D Maybe you can deversify and raise rice all summer and crawdads all winter! :wink:

What you think i do!!! We almost through cutting the second crop of rice right now. Come January-April I will be doing nothing but roping and crawfishing after work. It would be hard to ship them that far alive. Ill have to look into a couple of things first. As of right now Im contracted to a big restaurant in Lafayette.

Ohh sorry. I was thinking they wanted boiled crawfish. I keep forgetting that most of the people on here are northerners. Yall dont know what it means when we say " dont eat the dead ones". If all yall want is the crawfish meat, then your lookin to pay some big bucks. Last year tail meat was about $12 a pound down here. so having that shipped would cost yall prolly around $25 a pound. When we start doing some crawfish boils Ill post up some pics of how it goes.

Passed there last year for a rodeo in La Porte. Still looks like they were doing it. But they from TX, they really dont know that much about crawfishing. :wink:

I guess you need to come back to LA and get you some crawfish. They were good sized last year but in low numbers. We will see what this year brings.

Jersey, if i could put the smell on the pics, those northerners would be trying to climb through their computer just to suck the heads.

My older brothers own about 150 acres just west of Crowley on I-10. One of their cousins farms their place along with the rest of the family´s farm and every year harvests crawfish. I always enjoy watching that operation.

The crawfish industry has come a long way since I was a child. I recall a good friend of my dad´s who owned a big farm south of Crowley, Roland Faulk, telling me that he recalled selling crawfish to Don´s in Henderson for 6 cents a pound. :shock:
 
Robin, let us know when it's ready. At $12 a pound I'd gladly drive over and pick up a few pounds. I've tried the the Chinese version (and they even had the nerve to name it Beaudreux Crawfish) and the fat is all different and the flavor is way off. I wonder if there's a chile recipe that uses crawfish :shock: .

you can buy just the tails anytime.

Like i said. All of my crawfish is contracted to restaurants right now. I have to provide over 500 lbs a day to one restaurant.

Ohh just give me time on the crawfish chili. Ill figure out a way to do it sooner or later 8)
