chuckie, you can learn some of what is being done to build beef demand by checking www.beef.org. I believe you will find considerable effort is going into this effort. I'm not sure it is accurate to say that demand, or at least consumption, is dropping with the high prices. There is still lots of beef moving through the markets.
The belief of one Walmart meat manager does not equate with dropping consumption of beef, either. I will try to check out some supermarket prices in Rapid City today. I know that generally one can find bargains in quality beef priced for various "comfort" levels of cost, though it may take a little searching.
