Expected weight loss for slaughtered pigs

I'm sure someone here can help me out with this question.

Looking ahead for the time period of Dec 15 through the end of the year, I'm trying to plan the slaughter and sale of some of my smaller pigs. My largest hogs I'll sell live in the pueblo. The smaller ones, which bring much more money per kilo, will be destined for the city.

What I need to know basically is how much body weight a young pig that weighs XX lbs will likely lose when slaughtered. These guys will be sold whole; head, feet, and skin all in place, hairless, gutted but with the heart and liver included with the carcass.

Here are the weight classifications and expected pricing for the young guys:

Lechones - 8 kilos (~18 lbs) and less - 80 bolivares/kilo
Cochinillos - 8 - 20 kilos (20 kilos = 44 lbs) 55 to 60 bolivares/kilo

The 80 kilo animals (175 lbs) this year, live, should bring 18 bolivares/kilo. For the animals between 20 and 80 kilos, I'm going to try to structure the pricing for live animals on something of a sliding scale.

Anyway, any ideas of % of body weight loss for these critters before I get started?
