Long, but everyone should read this interview...especially if you have a weight problem. It's eye opening....or should be!!!!!

The underlying philosophy is this kind of Paleolithic diet theory. It's what we ate during the 2 million years that we were hunter-gatherers on this planet. The fact that we were hunter-gatherers for 2 million years suggests it was an extraordinarily successful evolutionary adaptation. The question is: What did we eat during these 2 million [years] when we left the jungle, the trees, went down into savanna and started surviving on whatever we could hunt or gather? That's the philosophy. The answer is, probably considerable meat, very low glycemic index, hard-to-digest roots and starches, and fruits and berries that look nothing at all like the beautiful Fuji applies you can buy at your local market now. Some carbohydrates, but whatever it was, it wasn't refined. It wasn't sugar. It wasn't flour. It wasn't easy to digest. That's my going theory. If this theory's right, the diet we evolved to eat is probably the correct diet.

Ranchy, I hope you read the entire interview. Here is what you should understand from it...

Today's dietary guidelines are based on flawed science by politically correct scientist that are vegetarian or quasi vegetarians. (Many refer to it as the "Death Pyramid"...rightly so IMO)These dietary guidelines are totally different from the diet humans spent 2 million years genetically evolving on. And what is most ludicrous is that these idiotic scientist are blaming Western civilization's increasing chronic health problems on the foods from the diet humans ate for 2 million years...ANIMAL FATS AND MEAT!!!!!!

Second, calories aren't calories...our bodies respond totally different to 1000 calories of animal meat and fats compared to 1000 of refined sugar and flour. You are what you eat...if you want to get fat, eat a lot of starches...that's how we fatten cattle!!!

Wonder where we can find that stuff to eat around here?

Simple, eat whole foods the way God made them with at least half the calories from meat and animal fats. Avoid , as much as possible, refined and processed foods...hydrogenated vegetable oils, refined sugar, refined flour, and any packaged food with an ingredient label that contains substances you can't pronounce.

One last point, most studies that condemn saturated fats don't differentiate between animal fats and hydrogenated vegetable oils. Your body understands how to utilize animal fats...hydrogenated vegetable oils are viewed as a foreign substance. Saturated fats are most stable at high temperature(by the laws of physics)...use coconut oil (lard or beef tallow, if you can find it) and butter (if you are burning butter, you are cooking too hot). EVOO (as Rachael Ray calls Extra Virgin Olive Oil) is acceptable at low temps. And only use cold pressed or expeller pressed olive oils.

Hope I haven't bored y'all with this, but I see it as a matter of life and death! And I see beef, including ground beef, as one of the most healthy foods we can consume!

One point on the Animal Fat.....

Meat that would grade Choice or Prime was likely a recent level of fat and not the level you would have seen for most of the last 2 million years,
