Feeding the crew

Actually though I might quit deer hunting and just butcher our next EXT using spot and stalk methods-I think whitetails are probably a bit easier to herd than they are.
 
Taco Salad:

3 pounds ground beef 
3 envelopes taco seasoning mix 
3 heads lettuce, shredded 
3 cups (12 oz) shredded cheddar cheese 
3 cups chopped tomato 
2 cups chopped onion 
2 cans (15 oz each) ranch or chili beans, drained 
1 bag (16 oz) Doritos
1 bottle (16 oz) Dorothy Lynch salad dressing (if you can't find DL, subsitute catalina)
1 jar (12 oz) salsa if desired

Brown beef; drain. add taco seasoning and prepare according to package  directions. cool. toss with remaining ingredients in a large bowl (I always use my big bread bowl).  yeied: 40-50 servings--

One of the guys at last year's branding asked what was for dinner when he first showed up. "You made taco salad again this year, right?" :

Also, this can be made up a day or two in advance, but don't add the hamburger mix, dressing or Doritos until the very last minute. Otherwise the lettuce (and chips) get soggy. :P
 
Chili:

whatever recipe you like, but mine is lazy man:

4-5 cans tomato sauce.
4-5 cans chili beans in hot sauce
2 lbs browned hamburger
1/4 c diced onions

Put it in the crock pot and plug it in in the tack room off our main corral (which is 8 miles from our house). Perfect for when we're weaning, preg checking, that sort of thing and need to stop mid day for eats but don't want to go clear back to the house.

By the way...gonna be heading over to Townsend (85 miles north) for a game on Thursday and then to Big Timber on February 11th for the last game of the regular season!!!! Will let you know more later.....gee, wouldn't it be nice if divisionals or state were in Billings,...give us a reason to "catch up" :wink:

Big Timber is the last game of the regular season on February 11th...the junior varsity plays at 4:30 and the varsity girls (which gus has gotten alot of playing time) will play at 6:00pm!!!! Go #25!!!!!!! :wink: :wink: Sure look forward to seeing you all there...hopefully, the roads will agree with a long travel!! :shock:
