How do you southerners cook your okra?

I guess I never make either-- Just a wicked stew, with beef and lamb--taters, onions, and carrots for veggies....Once in a while throw in a bag of frozen mixed veggies for a little extra...

But I don't think I've ever seen or tasted Okra..... :?

dang I aint had any in awhile...but now I much prefer Collards .

Now there we go...black eye peas/ collards/ okra and corn bread..make a good supper!! Well suppose we need some Chicken Fried Steak to go with it.


Mrs. Greg....not sure how to describe the taste of okra...it pretty much has a flavor of its own. Our Wal-Mart now has it in the frozen section...might check it out.

Better stay close to home IF you ever eat any. Better advice...if ANYONE ever offers you the stuff....just slap'em right then and there!!

Polk Salad is good stuff if fixed right. Tastes about like spinich. Boil it once for a few minutes and drain and rinse, then go again. Add fried bacon bits and the grease to it.....fix ya a pone a cornbread

That's some good eatin.

Okra has a taste all it's own, don't taste like nothin else that I know of...tastes like okra LOL

As for peas, I love fresh black eyed peas, but zipper peas are a whole lot easier to shell. Peas are just now gittin finished. But I'll plant another round of them in the fall. Along with collard greens, mustard greens, and probably come cabbage.

Our okra is just now gearin up and startin to make. Gotta pour the water to it tho or it'll just wilt, has the prettiest purple blooms you ever saw too. The blooms are etible too. dip them in batter and fry them......yummmmm....but I like the okra better so usually wait. If it's a really good bumper crop and lots of blooms still comin on, I'll pull a few and fry them.
 
What I picked off the okra plants today was loads of Japanese Beetles.
Yesterday the plants had beautiful leaves- today many are like lace :mad: :mad: :mad: :mad: :mad:

If you Canadians have never tasted okra and want the education some stores sell little bags of frozen okra. And Campbells Chicken Gumbo soup has okra in it- looks like little wheels with the seeds in a circle. Of course that is canned so the taste is different.

OK- Now I know what it is...I always thought it was a little tasteless in the Chicken Gumbo...

Altho I will no longer buy Campbells soup since I found out all the beef in their soup comes from South America :roll: :( ....

Rode back on a plane next to a fella from Campbells soup once from
Denver. I think they can the whole soup down there, beef, vegetables , etc.

OT...check out Wallyworlds frozen section. Get you a small bag of okra and try it..ya might like it. :wink:

Now Red Robin.. :roll: .boudain depends on the person that makes it. I have gotten some really bad, I dang sure dont like the old recipe using blood and innerds..but, here where we are, there is a gal that can make some that is really good.

polk salad -
It is a plant that grows in the south. It is very common in Georgia. It grows on a stalk and has green leaves. The plant can reach several feet tall by summer. I have seen them 6 feet tall. In the summer it produces red berries that birds love. The leaves are boiled, rinsed then cooked in bacon fat or lard with onions or eggs. It tastes like spinach. The tender stalks are chopped, coated in flour and fried, and tastes like okra. I have eaten tis wild plant all my life, and love it! It is said you can not harvest the plants once they produce berries. Old wives tales are once the plants produce berries they are poisionous, but birds do eat them and are not affected by them.

I'd never heard that the stalk part fried tasted like okra, that's interestin since we were just discussin "what does okra taste like" lol I coulda answered....like polk salad stems if I'd known :D I've only ever had it boiled with bacon...and it tastes like spinich to me. Somethin else that tastes like spinich is baby tumbleweeds.
 
My great aunt (who will be 101 this November) used to boil up a pot of green beans, then lie the okra on top, to steam...........YUMMY!!!!!!!!!!!!

And slimey okra is a LOT better than fried up stuff, but then I don't care for bacon, so that could be part of it, too........ :lol:
 
Ranchy, we don't fry it with bacon, I've never had okra fried or boiled either one with bacon in it. LOL Bacon is fer greens :D Course we do season our green beans with bacon. Southerners use bacon to season lots of stuff. And you'll find in just about any southern kitchen, smack dab in the middle of the stove, there's a lil pot or jar with a lid, called a bacon grease pot. It's used to save left over bacon grease for usin in other stuff for seasonin when your cookin.
