Wow, fair is finally done!!! I did pretty well, even tho my steer decided to go nuts in the show ring and wouldn't hold still long enough for the judge to touch him much...he told dad afterwards that my steer was prolly the best on in there but he couldnt give me the grand champ cuz he didnt touch him much. but accordin to the ultrasound, he did pretty dang good. He weighed 1250 at fair, had a 12.85 ribeye, .4 inches of backfat, and high choice. Here's all what I got:

I got $60 in awards for my ribbons...I'll get lots of good premium money too. The guy at the IGA in Roundup said that the owner should buy my steer at the auction, so he did. I got 1.35/pound at 1250 pounds, so $1,687.50 total. Pretty good I reckon. The Grand Champ steer sold at 1.75/pound at 1305 pounds, the reserve sold at 2.00/pound at 1185 pounds!!! prolly cuz she's like 10 years old and really cute lol. This was the first time I was actually smiling for real when sellin my steer lol!!!

Well, next year you'll have to start earlier breaking him to lead. :shock:

Grand Champion Beef breeding project. That is one happy bull now, he is back out in the pasture being a bull. That is one of the tamest animals I have ever been around.

Junior Showmanship, she wanted to use that stupid steer that wanted nothing to do with that show ring, he only wanted to sit in the barn next to his bull buddy, he would not drink even water from home until yesterday afternoon just before the last trailer ride. The bull on the other hand loves the attention and showing off.

She forgot to mention that she also won $100 in the beef cookoff with Orange Glazed Round steaks on the grill. Course my Ribs in Red Gravy cooked in the Dutch oven were way better, I just did not suck up to the people eating it as much, I'm not quite as cute or as blonde.

The cookoff was very successful, people telling me that next year we can do this and this and that so they want Hanta Yo to pull this off again. I am just glad we only have to do this once a year. I am tired.
 
Here is the short rib recipe, cooked in the oven, the edges get some what blackened, in the Dutch oven, they are not blackened and more juicy. We cook them in the Dutch oven outside in the summer rather than heating up the house with the oven. These are sw's man's favorite. You could do this with any kind of ribs.

"SPICY SHORT RIBS SMOTHERED IN RED GRAVY"

An awesome recipe for those shortribs nobody wants to bother with.

2 1/2 - 3 lb short ribs
Salt
Freshly ground black pepper (just use what you have)
1 t liquid crab boil (since we don't have this on hand I don't use it)
1 (14 oz) bottle ketchup
12 oz light beer
1 T molasses
1 T Creole or whole grain mustard
1 T chopped garlic (can use dried)
1/2 C chopped onions
1/4 C firmly packed brown sugar
Dash hot pepper sauce
Dash Worcestershire Sauce
Pinch salt
Pinch cayenne
1 T peeled and grated fresh ginger (I use the powder)
Pinch of freshly ground black pepper (see above)

Season the ribs with salt and pepper. Place the ribs in a large pot and cover with water. Add 1 t of the crab boil. Over high heat, bring the liquid to a boil. Reduce the heat to medium and simmer for 30 minutes. Remove the ribs from the liquid and cool. In a food processor, fitted with a metal blade, combine the rest of the ingredients (I mix this by hand-no big deal). Process until smooth, about 15 seconds. Scrape down the sides with a rubber spatula. Pulse two or three times.

Preheat the oven to 350 degrees F. Place the ribs in a shallow roasting pan. Pour the pureed mixture over the ribs. Place the ribs in the oven and roast the ribs for about 1 1/2 to 2 hours or until the ribs are tender.

Orange-Glazed Flank Steaks

Marinade:

2/3 C dry red wine
1/2 C orange juice
1/3 C lime juice
1/2 C honey
1/4 C cider vinegar
1/4 C soy sauce, preferable Kikkoman
2 T mild olive oil
1 1/2 t minced garlic
1 t finely grated orange zest
1 t tabasco sauce
1/2 t ground cumin
1/2 t ground thyme
1/4 t ground black pepper

2 - 2lb flank steaks,

To make the marinade, combine all ingredients in a shallow 14" glass baking dish and stir until honey is dissolved. Add the flank steaks, turn to coat, cover and refrigerate overnight.

Bring the steaks to room temperature, prepare coals for grilling, or preheat broiler in oven. Drain the steaks, reserving the marinade. Place the marinade in a large skillet and bring to a boil over high heat. Continue boiling until marinade is syrupy and mahogany colored, about 10 min. Remove from heat and let cool. Brush the glaze on both sides of the steaks, grill or broil 4" from heat until nicely glazed, about 5 min. Turn and grill 5 min longer for med rare steaks. Let the meat rest 5 min before carving. Transfer steaks to cutting board, holding a sharp knife at a 45 degree angle, cut the steaks across the grain in thin slices. Transfer the meat to a warm platter, top with remaining glaze, serve immediately.

We have used this with elk, deer, roundsteaks all with the same results. Flank steak is now one of the highest price cuts of meat in the counter, people used to throw them out. I asked the lady at the meat counter why and she said all of these really good recipes that have come from the cookoff that use flank steaks have upped the demand for them and their are only 2 to a beef so the supply is limited. She said she never has to pull flank steaks, they go out fast as she can put them in the case.

I swear-it was the whatchamacallit-doohickey-mechanisimisimisim inside of me sayin it. lol.

Our steers acted exact opposite at the show-mine went crazy at the acheivement day-I got Reserve Grand Intermediate showman, cause i can handle an ornerey animal well. lol. At the big show he was a big baby. lol. It's not easy, eh??

i think my steer was afraid of all the people watching and the noise, cuz the night before the show i had him outside and walkin around, settin up, in the arena with the other people who were practicin, no trouble at all. crazy animals.....
