I have had a hankering for muffins lately...and I have to say tim hortons muffins are dry,the baker's shop will set up a loan so you can afford their muffins,and costco's muffins come with enough oil on the bottom papper cup that you can top up an leaking tractor with what you can squeeze out of it........

So I would like to hear about some easy but good muffin recipes...I do not like raisins or carrot in muffins....but i like most other stuff......Well if anyone wants to put up a recipe i may give it a try.Also if you have a good recipe using Splenda instead of sugar I would like to see it to....thanks to all in advance....
 
Since summer is on its way and I love to grill or BBQ .I thought who better then to ask the folks of ranchers for a good steak marinade recipe,either an overnight soak or just a couple hours before grilling.As both would come in handy...
 
Google Jordan Marsh Blueberry Muffins. I make those, they are great.

Here is my favorite Bran Muffin recipe.

2c. boiling water
2c. Post 100% bran (If you can find it)
Pour water over the bran and let stand til it has cooled.
Add 3c. sugar, 1c. shortening, 4 eggs to cool bran Mix together well.
Add 5c. flour
3t. baking soda
1 1/2t. salt
Mix together.
Add 4c. Kellogg's All Bran; mixing in 1 cup at a time along with 1 qt. buttermilk.

Bake at 400 degrees for 15-18 minutes.

A good steak never needs a marinade... :wink: Buy THE best rib steak you can afford,and grill it, a little montreal steak spice...perfection!!!
 
Why would anybody EVER buy steak? :???: Except for my wonderful customers!~ :D Seriously though, get a thick steak with marbling, turn your grill on high and get it as hot as ya can. Season your steak with a rub or just salt & pepper. Sear it on both sides to lock in the flavor and juice and then turn down the grill and cook to your liking. Mine needs to be rare enough that a good vet could bring it back to life! Pour me a tall, ice cold Pepsi and whistle! :wink: Your on your own with the muffins! :D
 
My muffin recipe is basically a zuccini(sp) bread recipe:

3 c. flour
2 c. sugar (suppose you could use splenda)
3 eggs
1 c. oil
1 tsp. baking soda
1 tsp. baking powder
2 c. of whatever you want (I use zucciin, apples, apricots, pumkin etc)
3 tsp. cinnamon

Put in muffin tins, bake at 350 for 30 minutes.

all sound good,I do like pumkin and apircots,bannanas and zuccinni too....

Well I first read it as Barking Help (Can you tell we have a kennel?) LOL
 
Like a lot of people said a good steak stand on its own. But if you are hankering for a little spice try Those little McCormick spice packs and sprinkle a little on. The ]Southwest" or the "Chipotle" are darn good. I use them on brisket.

We had kabobs for supper tonight. Tam used stew meat and used some Tex Mex marinade. They were darn tasty. We processed about 400 yearlings today so we all were hungry.
 
I just came across my muffin recipie. And you can easily substitute
Splenda in this recipe--I have.

Morning Glory Muffins
1 c. flour
1 c. Whole wheat flour
3/4 c. sugar
2 t. baking soda
2 t. cinnamon
1/4 t. salt
3/4 c. egg substitute
1/2 c. vegetable oil
1/2 c. unsweetened applesauce
2 t. vanilla
2 c. unpeeled chopped apples
1/2 c. raisins
3/4 c. grated carrots
2 T. chopped pecans

Preheat oven to 350 degrees.
Line muffin tin with paper or foil liners.
In bowl, combine flours, sugar, b. soda, cinnamon and salt.
Whisk to blend.
In another bowl add egg substitute, oil, applesauce and vanilla.
Stir in apples, raisins and carrots. Add to flour mixture and
blend just until moistened, but still slightly lumpy.
Spoon batter into muffin cups, filling each one about 2/3 full.
Sprinkle with chopped pecans and bake until springy to touch--
about 35 minutes. Let cool 5 minutes, then transfer muffins
to wire rack and let cool completely.
 
I make a KICK BUTT steak. Doesn't need marinade, or rubs. Even re-heats well (too much for one sitting). My methods (cook on med/low heat), sear well, and flip occasionally. Then, when almost done, stick it on a plate, cover with tin foil, and then a dish towel, and let it rest for at least 5 mins. Resting is IMPORTANT. Anyway, I just had some last night. OH MAN was that good.
