Bell Peppers are comin out of my ears.....

Basically I use bell peppers when I make meatloaf, swiss steak, and a few other dishes, but I've got a bunchhhhhhhhhh of em this year, and was wonderin if ya'll have any other recipes you use them in. Or a good recipe for stuffed bell peppers that's not just the plain meatloaf variety.
Have a whole bunch of banana peppers too if anyone has a recipe these would be good in.
 
I put them out in the sun to Dry then freese them - Lots of flavor

I though I'd get fance and bought all the same size "Window Screens" (with the plastic Screen Cloth) and built a box with "wood screw" a 1/2" longer than the side walls were thick and used that I used to hold and seperate the screens

Then I lent it to "Someone" (?)

Now I have new screens and stack them using blocks of wood to seperate them or anything and cover the whole thing with a big Loose Plastic Screem Cloth - put weights on the cornors and anywhere else flies might get in

I like that better and it stores in alot less space.

Oh! Don't forget to restack the trays (screens are Tray now) at least once per day - (Bottom Trays are moved to the top) - - I turn Jerky (each piece) so it doesn't stick to the trayscreen + you can wash the Trays

The 'seperator blocks of wood' and be differant sizes - almost none for Jerky - Bigger for Peaches.

The whole process only take 2 days most of the time!

We love green peppers so we cook with them alot!

We eat fajitas quite often. In a pan with a little pad of butter we throw in red & green peppers along with onions. If you want to really use up the green peppers, do away with the red and do more green! :) Carmalize them up well. We put chicken breasts on the grill and then slice them and add some fajitas sauce... S&W brand is the best. Put the chicken, your veggies, some cheese and what ever topping you like in a tortilla and enjoy! They are so tasty!

We also make stuffed peppers from time to time. The filling consists of hamburger, rice, onions, tomato sauce and whatever spices you like according to your tastes. Cook all of those ingredients together.. the rice will just soak up the liquid from the tomato sauce so don't pre cook the rice. Stuff the peppers, top with some grated cheese and bake for probably about a half hour on 350. Sorry I don't have a recipe, you know how that goes!

Another family favorite is pepper steak. Cut up and slice some steak.. it's a good way to use to round steak! Cook that up with a little EVOO and set aside. Just slice up green peppers and onions, cook them and add them to the steak with what ever seasoing you like. You can eat it plain or with some rice.

Usually what I do is just put em in a plastic sack and freeze them whole and use them as I need em. But with the freezer full, I don't have that much room.
I may take the banana peppers and pickle some of them.

We do fajita's too, I'd forgotten about that.
 
Our favorite way to do peppers,fry them up a little butter,when brown add cream,cook until heated through.....gotta go to town now and get peppers 8)
 
All I have do with peopes is quarter them, remove all the seeds, drag them trhough some olive oil and toss them on the grill. This is best with the yellow and oragne varieties. Serve as a dide with some nice steaks and maybe some grilled corn and there you go.. A great dinner without any BTU's being pumped into your house by the stove or oen being on.
 
Grew Bell at the ranch - Ran a Bell Pepper Pack Shed for 2 years - There are at least 70 to 80 acers of bells in a 5 mile Radius - - I love them - Green and RED - I eat them whole like Apples.

Canning Bell will start shortly - Truck Loads - everyone around here knows me and I get Boxes of them

30 Years ago Reds only came at the end of the season

I started to ask some Farmers we were packing for to let the greens on the vine to turn Red

Safeway and the LA Market would take all the Fancy Red Bell Peppers I could Pack

Fast business
Pick in the AM
Pack at Noon
Ship late PM - To LA and Safeway
At LA Market next AM

MY BUYERS would give me a GOOD PRICE at that time - Bank Drafts in 2 days - - A fun business - -

One LA outside buyer tried to stiff us - he said that they were not very good and said he could only give $7 per Box - I was getting $17 - He said they were on his dock and he could not move them "BS" - I called back in 5 min and told him to leave them there - one of my regulars (3 doors down) would be tthere in 20 min to pick them up - All of a sudden he came up with $15 per box :) Thay was the last loas he ever got

stuff them with the meat and sauce you would usually use for taco's sprinkle a little cheese on them and bake like any meatloaf style bell pepper YUMYUM
