Tibbs......squash recipes

Squash Dressing

2 c cooked squash (cut up boil till done, drain)
2 c corn bread, crumbled
1 c chopped onions
1/2 stick oleo, melted
1 can cream of chicken soup
Salt and Pepper to taste.

Mix all of it and pour into a greased baking dish. Bake 30 to 40 minutes at 400.

Squash Patties

1 egg beaten
1 Tbls sugar
1/2 tsp salt
Dash of pepper
1 Tblsp finely chopped onion
1 c cooked squash (same way as for casserole)
1/2 c. flour
1 tsp baking powder

Combine all and mix well. Drop by tablespoonful into 1/8 inch hot oil in skillet. Flatten patties to 1/4 inch thickness. Cook to a golden brown, turn and cook on other side. Makes about 10 patties.
 
Those recipes look good JL!! My brother has been giving me a a lot of extra yellow squash lately and now I know what I can do with it. Thanks! "Oleo" - haven't heard it called that in a whole lot of years :) .
 
LOL that's cuz it came out of an old old church cookbook. I left it like that on purpose. Cuz no one calls it Oleo anymore.

Lil Lilly was readin recipes not long ago...and asked..."Mom what's Oleo?" hehe
