How Much Water

I think 10% we've got home raised hams they are a bit dry but alot better in my opinion. The thing I can't stand are boneless chicken breasts that are "FLAVOR ENHANCED" :gag: We normally buy some 150# hogs in the fall and let them roam with the replacement heifers and bulls as we feed corn silage and they are a bit wasteful. By spring they weigh 280 and we have them processed.
 
I take the boughten ones out of the plastic and wrap them in paper towel let them ooze for a day or two. My old boss had an An. Sci. text book that had a chart of how many cwt of hog you could run in a feedlot for every hundred steers. Farm raised pork is way better than the other. Dylan and Colleen have some tasty piggies about ready.

I could tell you a story about what happened RIGHT after I finished eating a home-cooked meal of store-bought "wet" chicken shortly after we were married.


But I'll spare you . . .

Let it suffice to say that my bride was at least mildly offended that I retained her meal for such a brief period of time. :oops: :lol:
 
As a treat for Christmas this year, I ordered a honey cured ham from Cabela's. 14 pounds for $100. :shock: The Bulldog thought I had lost my mind until it came. That ham was the best ham I ever tasted, bar none. Worth every penny, and then some. We'll be ordering again, probably for Easter.
 
We used to get a sow every spring-farrow it out then about deer sausage time sell off the offspring and then butcher the sow for ourself. The last 'home' pig we ate was a Large English Black boar was just huge-he tasted pretty good not rank at all. When Megan and Tyler were quite young we had 150 or so pigs of various shapes and sizes-we did everything by hand-they could write a pretty good hurtin' song about the old wheelbarrow with the crooked wheel.
