Potato Soup Recipe

I'm gonna be makin a Cowboy Cookie this holiday season.....I found the recipe in Mr Lilly's grannies recipe book.....this summer when we went to the beach....my son and MIL made those cookies...best cookie I've had in a long long time. I haven't made them yet. But since they did...and I found them so good....they now have a spot permanantly on the holiday baking list.
 
I insisted on going back to college after having kidney surgery and my mother kept making molasses cookies from the Farm Journal's cookbook. She would send them to me in coffee cans...they were that big around. I didn't have the energy in the evening to go to eat dinner and just ate one of them and a cup of coffee in my dorm room. Those molasses cookies will literally keep you alive. I now have the recipe book in my possesion and will not turn lose of it.

If you want to make COWGIRL cookies just leave out the nuts. :wink: :lol: :lol:

I've heard similar before........but I'm still a non-believer. :lol:

Well.....maybe those from Brookshire Brothers with the macadamia nuts and white chocolate would be OK.

That potato soup is great. My husband and I have made it for people just coming home from the hospital and for potluck lunches at work. It is always a hit. Thank you.
We have it at home when the temperature is 65 degrees or less at noon. Hey, it's Florida, so that will come around again in late November as a cool front. (Don't get jealous...it is 85 degrees at night in July, August, and September, you can't get away from it.)

heck it hasn't got to 65 in the daytime here yet :mrgreen: with envy, oh well have to play with the hand that is delt to us

Loaded it up in the truck after we ate...and took it to his parents for them to have. Then after they ate...came home and I had myself another bowl of it.

It really hit the spot with this cold weather. We'd gathered firewood this afternoon, built a fire, and sat down with a bowl of soup. Perfect!

Thought I'd share the recipe.

1 bag of frozen hashbrowns
3 cans of chicken broth
1 can cream of chicken soup
1/2 cup onion diced
1 8oz package cream cheese
salt and pepper to taste.

Put first four ingredients in pot and slow simmer for a couple hours. Then add softened cream cheese to the pot....stir until all of it's melted in. (I used my wisk because I was impatient LOL)

Best tater soup I've ever eaten!!!!!

I throw in a Smoked Ham Hock or a hand full of Shrimp and /or Oysters and /or chopped clams...
