Sweet Jerky Recipe

I got a smoker for Christmas and have been experimenting since-I just took this batch of jerky out and it's pretty tasty. I made it with beef hamburger but it would be great on wild game too. I'm not a measurer so I'll give the ingrediants and approximate amonts.

4lbs ground meat
8 oz cran raisans
1 cup cranberry juice
1 cup brown sugar
1 tablespoon lemon pepper
half cup lemon juice
2 tablespoons Mortons tender quick salt
A couble glubs of maple syrup

I chopped up the cran raisans in the blender then mixed through the meat-then i just added the rest of the stuff with the cranberry juice in the blender than mixed it through the meat. I left it sit over night then smoked it for three hours with Apple chips-I left it in the smoker just with heat for about 15 hours. You have to play around with how much liquid I had to make kind of patties because it wasn't that bindy. It's the closest thing to hamburger candy I've ever ate.
 
Well we like the lil sausage jerkies real well. That's what I'd really intended it for. But I'd like to try making some of the flat too. Fella that got us interested in the jerky gun said he'd not ever had any luck making jerky with hamburger meat. He said it would go bad because of the fat. But ours has almost no fat in it...so it'd probably work fine.
Dunno bout the sweet stuff tho.....I like the good old fashioned beefy smoked flavor with some salt and pepper and a few other spices. .
 
I have so much meat to go through that I like to try different recipes and such. I made a form of pemmican one time was pretty good too. You overcook a roast-dry it right out-then shred the meat and mix some berries, honey and sunflower seeds in it and make little balls of it then freeze them. We'd put a couple in our pockets in a ziploc bag when we were hunting. By the time they thawed out it was time for a snack-you could go all day on them. Our hamburger is off a grass finished critter too so a bit leaner than most.
