My absolute favorite is to take some zucinni and dice it into 1/2 inch chunks. Set in a bowl, and set aside. Cut a couple of bowl fulls of corn off the cobb. Dice half a bowl of jalpeno. Get a large cast iron skillet pretty hot, drop a stick of butter in it and let it melt without burning. dump in the corn and jalapenos, and fry in the butter until they are hot. Dump in the squash and heat on a high high heat till they are sort of toasted or a little brown on the outside and hot though and through, but not cooked to mush. Throw in some good salt to taste and serve with a nice piece of beef, pork, or barbeque.

Goodpasture I'm going to try that. It does sound gooooooooood!!

Here is how I fix summer squash. (zuccini, yellow, etc)
Melt some butter and olive oil. Slice the squash, slice mushrooms.
slice onions (use as much as you want). Add salt and garlic pepper (YES, GARLIC PEPPER) and some real lemon lemon juice to taste.
Cover til the veggies are cooked, then take the lid off and brown to your liking) and serve with your favorite meat.

Hubby planted so much zucchini I'm going to need all the recipes I can find! :help:

These ones I will try for sure. I've got lots of jalapenos and corn already.

This is the way I cook it.

Put some marjarine or butter in a frying pan. Add some thinly sliced onions and about five cloves of chopped garlic. Yes... five. Fry for a minute or two then add sliced zuchinni and cook it all until the zucchini starts to carmalize a bit and pick up some nice golden colour. Add some fresh chopped basil, oregano and parsley and salt and pepper. (Or Italian seasoning if you don't have fresh herbs). Drop a couple of coarsely chopped tomatoes on top and shut the lid until the tomatoes have heated through. Take off the lid and sprinkle with parmesan cheese if you have it.

MMMM ...... good.

my dad and mom make jelly and pies, it is also good fried in some butter then put in the oven and sprinkle some cinnamine and sugar on top and bake the sweets in, that is gooooooooood.

I cook it low fat... Spray the pan with crisco butter flavored spray put in the zuccini, onions and peppers spray with spray till all the veggies are covered and cool uncover till veggies are done. Firm but not mushy, then add cajun seasoning sauce.............

I haven't done it in a long time, but make a basic bread stuffing with lots of good sausage and tart apples, and a touch of some brown sugar and cinnamon. Take one of those large over sized zucchinis, slice it lengthwise, scoop out all those big tough seeds, and stuff it with the stuffing and bake it......just before it comes out of the oven sprinkle it with some grated sharp cheddar cheese and toast it under the broiler......the mix of flavors is awesome....serve with some corn and green beans on the side.

I usta set out buckets of the things on the side of the road with FREE plastered on the side.

Well, that's over cause the first few days it was a hit....now the neighbors are OVER IT!!

I guess the senior center in town are so full of squash and cucumbers... :D :D :D And everyone in town is locking their cars.... I leave it on their doorstep. Ring the doorbell and run!!!!!!!
I wonder how Denny is doing with his maters...... Remember last year all of the maters his wife canned........ :D

thank you wonderful Ladies for all them respies, I knew I could count on you....... now I think of something else to cook..

After all that, how should that vegetable should be spelled? The variations were: Zuccini, Zuccine, Zuccinni, Zucchini, Zuchinni and Zuchni. Now I'm confused about the real spelling! Anyway carmelized in half butter half olive oil with onions and garlic is a favorite.

nr I quoted your post and spell checked. None of the ways you spelled ZUCCHINI came out right according to the computer. I coppied somebody esles version and was wrong. Funny thing is we all knew what we were talking about.
